{"id":8265,"date":"2019-02-17T17:49:56","date_gmt":"2019-02-18T00:49:56","guid":{"rendered":"https:\/\/www.marialiberati.com\/?p=8265"},"modified":"2019-02-17T17:49:56","modified_gmt":"2019-02-18T00:49:56","slug":"a-gluten-free-dessert-in-the-clouds","status":"publish","type":"post","link":"https:\/\/marialiberati.com\/freshsite\/2019\/02\/17\/a-gluten-free-dessert-in-the-clouds\/","title":{"rendered":"Gluten Free (GF) Coconut Cloud Dessert."},"content":{"rendered":"\n<p>As the old saying goes\u2026\u201cHe who seeks what they should not, finds what he would not.\u201d There is a little&#8217; paese&#8217; in the province of Viterbo (in Umbria, Italy) that should be called the true \u201cMagical Kingdom.\u201d From far away, this town looks like a vision in the sky\u2026something out of a dream\u2026an ancient place where it seems as though all time has stood still\u2026Civita di Bagnoregio.<\/p>\n\n\n<p>Embarking on a day trip around Umbria seemed like it might be quite uneventful. Though it is a beautiful part of Italy, I assumed that I would see many of the same beautiful churches filled with frescoes and  rolling verdant landscapes . Surprisingly, I felt as if I was suspended on a cloud whilst spending time there. There it was\u2014this seemingly magical walkway to the sky.<\/p>\n\n\n<p>If you decide to visit Civita di Bagnoregio, you may enter by bus from Orvieto. Cotral buses provide transportation for a small fee. The bus leaves from Orvieto\u2019s Piazza Cahen. Then, the bus drops off in Bagnoregio. From Bagnoregio, a minibus drives up to Civita. If you prefer walking, you can walk up the hill and follow the main road, enjoying the breathtaking views (Wikitravel). <\/p>\n\n\n<p><strong>Coconut&nbsp; Cloud Dessert-(&nbsp; gluten free )<br \/><\/strong><\/p>\n\n\n<p>(approx 8 servings)<\/p>\n\n\n<p>*1 cup rice flour-<\/p>\n\n\n<p>*1 cup coconut flour<\/p>\n\n\n<p>*3\/4 cup sugar<\/p>\n\n\n<p>*4 ozs butter<\/p>\n\n\n<p>*5 medium eggs<\/p>\n\n\n<p>*1 tsp baking powder gluten free<\/p>\n\n\n<p>*1 lemon<\/p>\n\n\n<p>*extra butter to butter pan<\/p>\n\n\n<p>*pinch of salt<\/p>\n\n\n<p>*Powdered sugar<\/p>\n\n\n<p>Separate eggs and set whites aside. Beat egg yolks, sugar into a cream. Add in softened butter and lemon zest and beat again. In separate bowl place in flours and baking powder. Add into egg yolk mixture a little at a time. In separate bowl beat egg whites, pinch of salt to firm peaks. Then fold egg whites into mixture. Butter and flour with rice flour or potato starch a square or round 8 \u201c cake pan. Place in batter.
