Pici is the typical pasta made in this region while <em><strong>briciole<\/strong><\/em> is the Italian word for <em><strong>bread crumbs<\/strong><\/em>. Wow..I was able to make this dish at one of my&nbsp; favorite stops-<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2014\/09\/DSCN60451.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"background-image: none; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border: 0px;\" title=\"DSCN6045\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2014\/09\/DSCN6045_thumb1.jpg?resize=244%2C184&#038;ssl=1\" alt=\"DSCN6045\" width=\"244\" height=\"184\" border=\"0\"\/><\/a> Villa Nottola- and prepared and then dined on Pici alla briciole with some wine referred to as Super Tuscan..but always from Montepulciano.<br \/>\nIf you want to try a staycation and turn your kitchen into a taste of Montepulciano..grab a bottle of wine from Montepulciano and whip up some of this pici alla briciole..and World pasta Day is a little over a month away..in October 2018..the perfect dish for this day as well&#8230;..<\/p>\n<h1><strong>Pici alla Briciole<\/strong><\/h1>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.gourmetvacation.it\/filesroot\/Images\/1046_PICI_ALLE_BRICIOLE_-_VAL_D_ORCIA__917__jpg\/%24600%240%24\/PICI_ALLE_BRICIOLE_-_VAL_D_ORCIA__917_.jpeg\" alt=\"\"\/><br \/>\n(If you can\u2019t find pici pasta, regular spaghetti will do)<br \/>\n1 lb of day old bread<br \/>\n1 onion or 2 leeks or 2 scallions<br \/>\nsmall handful of fresh parsley leaves chopped<br \/>\n1 clove of garlic minced<br \/>\nextra virgin olive oil<br \/>\n! lb of pasta (pici or spaghetti) cooked till al dente)<br \/>\nPlace day old crusty bread in food processor till reduced to bread crumbs. Place 2 tablespoons olive oil in saute pan with chopped garlic and onion, saute for 1 minute , add in&nbsp; 1\/4 cup Montepulciano, add in bread crumbs to toast. When bread crumbs are toasted, add in chopped parsley and saute. Cook pasta till al dente and place in saute pan with bread crumb mixture place on low heat and toss.
