Delicious, healthy and light!<br \/>\n<a href=\"https:\/\/www.marialiberati.com\/2016\/01\/14\/roasted-potatoes-and-fennel-casserole\/roasted-potatoes-and-finocchio\/\" rel=\"attachment wp-att-6896\"><img data-recalc-dims=\"1\" fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-medium wp-image-6896\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2016\/01\/roasted-potatoes-and-finocchio-225x300.jpg?resize=225%2C300&#038;ssl=1\" alt=\"roasted potatoes and finocchio\" width=\"225\" height=\"300\" \/><\/a><br \/>\n<strong>Roasted Potatoes and Fennel<\/strong><br \/>\n1 pound red or yellow potatoes<br \/>\n1 large fennel bulb, cleaned and cut in quarters<br \/>\n1 fresh lemon<br \/>\n1\/4 cup extra virgin olive oil<br \/>\nfreshly ground black pepper<br \/>\n4 cloves garlic<br \/>\nBoil potatoes for 10 minutes. (you can remove or leave peel on to roast) Cut potatoes in quarters. Place cut potatoes, fennel in roasting pan with garlic cloves.Grate lemon over potatoes and fennel, then squeeze juice on top of fennel and potatoes, place in garlic cloves. Pour in olive oil over vegetables, grind black pepper on top. Gently stir to distribute liquid over all vegetables. Bake in preheated oven at 375 degrees for 40-50 minutes. Stir a few times while cooking.
