{"id":6349,"date":"2014-10-03T00:07:40","date_gmt":"2014-10-03T07:07:40","guid":{"rendered":"https:\/\/www.marialiberati.com\/?p=6349"},"modified":"2014-10-03T00:07:40","modified_gmt":"2014-10-03T07:07:40","slug":"couscous-and-another-foodie-stop","status":"publish","type":"post","link":"https:\/\/marialiberati.com\/freshsite\/2014\/10\/03\/couscous-and-another-foodie-stop\/","title":{"rendered":"Cous Cous with Tuna and Veggies &#124; Philadelphia Food Show"},"content":{"rendered":"<p><strong>copyright 2014 Maria Liberati\/Art of Living, PrimaMedia,Inc.<\/strong><br \/>\n<strong>\u201cCouscous, the food so nice, they named it twice\u201d<\/strong><br \/>\n<em><strong>from the film Pineapple Express<\/strong><\/em><br \/>\n<img data-recalc-dims=\"1\" height=\"310\" width=\"472\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/realfood.tesco.com\/media\/images\/couscous-HERO-6e599284-1faa-40c1-9ba0-9575f190e509-0-472x310.jpg?resize=472%2C310\" alt=\"\" \/><br \/>\nWhat better way to enjoy great food and discover new dishes and new and not so new\u00a0 local venues than to attend this year\u2019s Philadelphia Food Show at the Valley Forge convention Center.<br \/>\nThis year my booth will be a pop-up sampling booth of recipes from my books along with book signings.<br \/>\nI am really honored to be part of this year\u2019s event\u00a0 I will be signing copies of my latest book and sampling\u00a0 some delicious recipes with one or more\u00a0\u00a0 couscous dishes to share for tasting!<br \/>\nPlease stop by and say Hi!<br \/>\n<strong>Cous Cous<\/strong> <strong>with Tuna and Veggies<\/strong><br \/>\n1\/2 cup couscous<br \/>\n4 cups vegetable broth<br \/>\n1 zucchini<br \/>\n1 can of tuna<br \/>\n4 roasted peppers (from Roland Foods)<br \/>\n1 tablespoon extra virgin olive oil<br \/>\n2 ounces small cherry or grape tomatoes<br \/>\nsmall handful mint or fresh basil leaves<br \/>\nMeasure couscous and place in bowl. Cut zucchini into long sticks. Place olive oil in saute pan and saute zucchini sticks till golden. Set aside.<br \/>\nBring vegetable broth to a boil and place\u00a0 into couscous. Stir until couscous is puffy, add in a pat of butter and stir. Continue stirring till most liquid has ben absorbed by couscous. Separate couscous with a fork.<br \/>\nFlake tune in separate dish. Add into couscous. Place in cheery or grape tomatoes that have been cut in half.
