Just in case you haven\u2019t noticed the chill in the air..and a bowl of warm soup make a wonderful dinner companion on a brisk Fall evening.\u00a0 Inspired by Henri Matisse Green Pumpkin\u2026a recipe\u00a0 that combines two of my favorite\u00a0 \u2018good for you\u2019 ingredients-\u00a0 fresh pumpkin and mushrooms. .. now as for that green pumpkin..still looking for one<br \/>\n<strong><em>I would rather sit on a pumpkin and have it all to myself than to be crowded on a velvet cushion<\/em><\/strong><br \/>\n<strong><em>Henry David Thoreau<\/em><\/strong><br \/>\n<strong>Cream of Pumpkin Soup<\/strong><br \/>\n1 lb of\u00a0 of fresh pumpkin (peeled and seeded and\u00a0 cut into small cubes)<br \/>\n4 ounces of button mushrooms<br \/>\n1\/2 cup cream (or substitute fat free half and half)<br \/>\n1 small onion finely chopped<br \/>\n1 scallion finely chopped<br \/>\n1 clove of garlic<br \/>\n2 tsps of freshly chopped parsley<br \/>\n1 bouillion cube<br \/>\n2 tblsps pine nuts<br \/>\n3 tablespoons of extra virgin olive oil<br \/>\nsalt and pepper to taste<br \/>\nFinely chop onion and scallion. Clean mushrooms and cut into large pieces, removing stems. Cut pumpkin into cubes..<br \/>\nPlace in 2 tblsps olive oil, chopped onion and scallion in saute pan and saute over low heat. When just\u00a0 golden place in pumpkin and saute using a wooden spoon to turn.\u00a0 Add in cream and 1 cup of warm water along with one bouillion cube (crumbled)..\u00a0 cook for 25 minutes.<br \/>\nIn another saute pan, place 1 tblsp olive oil and place in mushrooms. Add in chopped parsley and pine nuts. Saute until water from mushrooms has just about evaporated.<br \/>\nWhen pumpkin is tender, remove from heat and when warm (not too hot) place in food processor or potato masher to make\u00a0 a creamy mixture.
