I woke up this morning with\u00a0 a Focaccia\u00a0 on my mind, specifically a\u00a0 Focaccia Pugliese\u00a0 ( A delicious memory from my trip to Lecce in Puglia) but instead ..got bombarded with so many ingredients and sidetracked so to speak\u2026.<br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2013\/08\/HPIM0338-2.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"background-image: none; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border: 0px;\" title=\"HPIM0338 (2)\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2013\/08\/HPIM0338-2_thumb.jpg?resize=244%2C184&#038;ssl=1\" alt=\"HPIM0338 (2)\" width=\"244\" height=\"184\" border=\"0\" \/><\/a><br \/>\nThe warning is don\u2019t ever go food\u00a0 shopping with Italian architects and chefs together..so many recipes and dishes coming at you\u2026especially at a fresh market full of local seafood, produce, spices\u2026 At 8:30 AM I was driven and accompanied to the market to get a bag of flour and some olives and came back with ingredients for\u2026.patata (potatoes) al forno (roasted) with organic rosemary from the garden..cacio e pepe (Pasta with pecorino cheese\u00a0 and black pepper)..Cozze e Pecorino (Mussels and Pecorino cheese)..pizza..crostata\u2026 Local Pecorino cheese made right here in Abruzzo\u2026peppers to\u00a0 sautee in some locally produced\u00a0 white wine..not sure when I am going to make all these things,.but the cozze (mussels) were local and fresh so I had to choose that as my Pranzo (lunch) dish\u2026 focaccia Pugliese will have to wait for another day..although I now have all the ingredients for it\u2026and I have returned at 12:30 PM ( 4 hours food shopping at a local market only 10 minutes away)..and the obsession for food..that is good food continues..such a contradiction when the subject of food enters all work stops..and concentration is on the food\u2026.<br \/>\nThe absolutely necessary ingredients for this dish are an excellent dry white Italian wine (Pecorino, Trebbiano D\u2019Abruzzo) and fresh Mussels, extra virgin cold pressed olive oil and of course the Pecorino Cheese\u00a0 from Abruzzo..<br \/>\nBut hurry make it before summer\u2019s gone and get some fresh local mussels if possible..<br \/>\n<strong>Cozze e Pecorino (Mussels and Pecorino)<\/strong><br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2013\/08\/cozze-e-pecorino-1.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"background-image: none; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border: 0px;\" title=\"cozze e pecorino 1\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2013\/08\/cozze-e-pecorino-1_thumb.jpg?resize=244%2C184&#038;ssl=1\" alt=\"cozze e pecorino 1\" width=\"244\" height=\"184\" border=\"0\" \/><\/a><br \/>\n2 lbs fresh mussels, washed and cleaned<br \/>\n15 cherry tomatoes<br \/>\n3 tablespoons extra virgin olive oil<br \/>\nhandful freshly chopped parsley<br \/>\n4 cloves fresh garlic<br \/>\n1 pound freshly made spaghetti or tagliolini pasta<br \/>\n1\/4 cup pecorino cheese or to taste<br \/>\nClean the mussels or have them cleaned at your market if possible (much easier). Place olive oil and garlic in a large pan and when garlic becomes golden, place in mussels.Add in 1\/2 cup of dry white wine. Saute for 15 minutes. Remove and discard\u00a0 mussels that have not opened up.\u00a0\u00a0 Wash and cut cherry tomatoes into quarters and place into mussels, add in freshly chopped parsley. Let saute for another 5 minutes.\u00a0 Cook pasta as directed and when finished, add into mussels and saute for 2 minutes, remove any extra liquid. Remove from heat.Grate pecorino cheese on the top and some black pepper. Gently stir.
