I left with a rare present for today\u2019s pizza.. <strong>madre lievito<\/strong>..it is not the yeast made from beer but a yeast made from a natural fermentation process.. made with just flour, honey, water olive oil..a long fermentation process..and everytime pizza is made some of this \u2018madre yeast\u2019 is put aside and\u00a0 kept in refrigerator\u00a0 for next batch of pizza or bread..it makes\u00a0 pizza and bread with a lighter\u00a0 and fresher tasting consistency..no yeast smell ..just the perfume of a fragrant pizza filling\u00a0 the kitchen..\u2026. if you can get some from your local bakery it is well worth taking the time to find\u2026.but beware you will not want to eat pizza made from regular brewer\u2019s yeast again!<br \/>\nSome bakeries and pizzerias here in Italy have kept this natural yeast in their families for over 50 yrs.
