The\u00a0Basic Art of Italian Cooking\u00a0<br \/>\nahhh..it is getting closer to Valentine&#8217;s Day..I\u00a0can smell the roses and taste the chocolate..<br \/>\nDon&#8217;t forget the wine. My choice is <a href=\"http:\/\/www.trifter.com\/Practical-Travel\/World-Cuisine\/Orvieto-Wine-of-Popes-Princes-and-Artists.520249\">Orvieto Classico<\/a>..perfect for risotto or fish or chicken..My suggestion would be a risotto al mare.seafood risotto.<br \/>\nWell it contains clams and they are an aphrodisiac.<br \/>\nHere is the recipe and more on Orvieto Classico shortly.<br \/>\n<strong>Risotto al Mare<\/strong><br \/>\n1 cup arborio rice<br \/>\n4 -5 cups vegetable broth<br \/>\n1\/4 cup finely chopped parsley<br \/>\n4 pounds small fresh or fresh frozen clams<br \/>\n1 slice onion chopped finely<br \/>\n1 clove garlic<br \/>\n2 cups Orvieto Classico or dry white wine<br \/>\n1 tablespoon butter (unsalted)<br \/>\n5 tablespoons of extra virgin olive oil<br \/>\nsalt &amp; pepper to taste<br \/>\nPlace 1 tablespoon of olive oil in saute pan and heat,place\u00a0in clams and pour in 1 cup white wine. Saute til clams open. Take out any that do not open.\u00a0 Set aside sauteed opened clams.<br \/>\nIn another saute pan, place in 1 tablespoon olive oil, heat, place in chopped parsley and the juice from clams that have just cooked. Saute for 2 minutes.<br \/>\n\u00a0Place vegetable broth in soup pan, add in parsley mixture to broth. Stir and heat to boiling. In another saute pan, add in remaining olive oil chopped onion, garlic clove whole, and saute till onion begins to turn golden.Add in dry rice, pour in 1 cup white wine. When liquid is absorbed, add in 3\/4 cup\u00a0of broth and stir continuously, Repeat this process until rice is al dente (about 15-20 minutes).Add in cooked clams, stir.
