{"id":420,"date":"2008-12-01T16:23:55","date_gmt":"2008-12-01T16:23:55","guid":{"rendered":"http:\/\/marialiberati.com\/blog2\/?p=420"},"modified":"2008-12-01T16:23:55","modified_gmt":"2008-12-01T16:23:55","slug":"420","status":"publish","type":"post","link":"https:\/\/marialiberati.com\/freshsite\/2008\/12\/01\/420\/","title":{"rendered":"My Salmon Post"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2008\/12\/baked-salmon.jpg?ssl=1\" title=\"baked-salmon.jpg\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2008\/12\/baked-salmon.thumbnail.jpg?ssl=1\" alt=\"baked-salmon.jpg\" \/><\/a>copyright, 2008, Maria Liberati<\/p>\n<p style=\"margin-bottom: 0in\">Salmon is\u00a0a\u00a0\u00a0&#8216;healthy for you to eat&#8217;\u00a0dish and even though this \u00a0weekend was made up of \u00a0turkey, turkey and more turkey..We \u00a0&#8216;squeezed&#8217; in a salmon dinner on Sunday.<\/p>\n<p style=\"margin-bottom: 0in\">In my recipes for the Feast Your Eyes Campaign for the American Academy of Ophthalmology (A campaign I was selected as\u00a0 healthy chef spokesperson to\u00a0develop recipes\u00a0 that provide minerals and benefits for\u00a0the eyes) I\u00a0use seafood such as salmon and tuna for many dishes.\u00a0Research has shown that eating healthy along with regular eye exams delays Macular degeneration.<\/p>\n<p style=\"margin-bottom: 0in\">We cooked it a few different ways this weekend.\u00a0 Here are two different ways to eat salmon and serve with a bottle of dry white wine or&#8230; now that the Holidays are upon us, try some sparkling, dry, white champagne and\/or Prosecco to go with this dish<\/p>\n<p style=\"margin-bottom: 0in\">*Before baking, rub both sides of salmon with lemon juice and oil, place salmon skin side down in baking pan or casserole dish to bake.<\/p>\n<p style=\"margin-bottom: 0in\">&nbsp;<\/p>\n<p style=\"margin-bottom: 0in\">* Before baking, cover salmon with a bread crumb topping made this way:<br \/>\n1 cup freshly made (plain) breadcrumbs<\/p>\n<p style=\"margin-bottom: 0in\">2 tsps melted butter<\/p>\n<p style=\"margin-bottom: 0in\">1 tblsp capers<\/p>\n<p style=\"margin-bottom: 0in\">&nbsp;<\/p>\n<p style=\"margin-bottom: 0in\">Top salmon with fresh breadcrumbs, then sprinkle with capers and drizzle melted butter on top.
