Traditional Holiday foods always bring back remembrances of Holidays past\u00a0 when dishes decorate the Holiday table.<br \/>\nIt\u2019s always fun to find out about my family tree through the traditional foods. If you want to explore your family history,\u00a0\u00a0 think of \u201cwhat was your first memory of food\u2019? what was your typical family meal? what types of food were around the house? what foods were made to celebrate Holidays?<br \/>\nOne of my favorite Spring dishes is\u00a0 Crespelle with Fresh Asparagus. Crespelle is an Italian version of a crepe. These are served as a first course and was sometimes a usual Holiday dish.Crespelle are traditional fare from the Abruzzo region of Italy, where my family originated from.<br \/>\n<strong>Crespelle with Asparagus<\/strong><br \/>\n<img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.alimentisenzaglutine.it\/prodotti\/crespelle_asparagi.jpg\" alt=\"\" \/><br \/>\n<strong>(from <a href=\"https:\/\/www.marialiberati.com\">The Basic Art of Italian Cooking: Holidays &amp; Special Occasions-2nd edition<\/a><\/strong><br \/>\n<strong>Serves 4.<\/strong><br \/>\n<strong>For crespelle: <\/strong><\/p>\n<ul>\n<li>1 cup flour<\/li>\n<li>1 tablespoon butter<\/li>\n<li>\u00bd cup milk<\/li>\n<li>4 eggs<\/li>\n<li>Pinch of salt<\/li>\n<\/ul>\n<p><strong>Filling:<\/strong><\/p>\n<ul>\n<li>1 lb fresh asparagus<\/li>\n<\/ul>\n<ul>\n<li>1 cup fresh ricotta cheese<\/li>\n<li>1 cup fresh ricotta cheese<\/li>\n<li>freshly grated Parmigiano\u2013Reggiano cheese<\/li>\n<li>1 whole egg and 2 egg whites<\/li>\n<li>Pinch of salt<\/li>\n<\/ul>\n<p>Wash, clean, and steam asparagus. Cut off tips.<br \/>\nIn a bowl, place in ricotta, grated cheese, whole egg, egg whites, asparagus tips, and pinch of salt. Blend with wooden spoon and set aside.<br \/>\nIn another bowl, place in all ingredients for crespelle. Blend with wire whisk. Heat a nonstick cr\u00eape pan and cook crespelle. Use 1 tablespoon for each. When finished with batter, stuff crespelle with ricotta mixture.<br \/>\nLightly butter a casserole dish. Place filled crespelle in dish. Top with freshly grated cheese.
