{"id":3798,"date":"2012-02-14T21:52:14","date_gmt":"2012-02-15T04:52:14","guid":{"rendered":"https:\/\/www.marialiberati.com\/?p=3798"},"modified":"2012-02-14T21:52:14","modified_gmt":"2012-02-15T04:52:14","slug":"valentines-day-risotto-and-touring-italy-from-my-kitchen","status":"publish","type":"post","link":"https:\/\/marialiberati.com\/freshsite\/2012\/02\/14\/valentines-day-risotto-and-touring-italy-from-my-kitchen\/","title":{"rendered":"Valentine&#039;s Day Risotto with Strawberries and Champagne &#124; Touring Italy From My Kitchen"},"content":{"rendered":"<div class=\"wlWriterHeaderFooter\" style=\"float: none; margin: 0px; padding: 0px 0px 0px 0px;\"><script src=\"http:\/\/www.google.com\/buzz\/api\/button.js\" type=\"text\/javascript\"><\/script><\/div>\n<p>Text copyright 2012 Art of Living, PrimaMedia,Inc\/Maria Liberati<br \/>\nA romantic Valentine\u2019s Day and even though I was not far away from the kitchen I could not help but pause every so often to catch\u00a0 a glimpse of my favorite romantic flicks from Italy\u2026and take a tour of Italy from home\u2026they present Italy in it\u2019s former glory..from\u00a0 <strong>Summertime<\/strong> with Katharine Hepburn in Venice<br \/>\n<img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/littleorangekitchen.typepad.com\/photos\/uncategorized\/2008\/02\/04\/51zccafm71l_ss500_.jpg\" alt=\"\" \/><br \/>\nand <strong>Two Women<\/strong> with Sophia Loren filmed in Sora<br \/>\n<img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.moviepowder.com\/sitebuildercontent\/sitebuilderpictures\/MoviePictures\/TwoWomen.jpg\" alt=\"\" \/><br \/>\nto <strong>Yesterday, Today and Tomorrow<\/strong> with Sophia and Marcello Mastroianni in Naples and Rome,, (they go together like peanut butter and jelly or should I say pasta and Parmigiana) what a tour\u2026<br \/>\n<img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.moviegoods.com\/Assets\/product_images\/1020\/435896.1020.A.jpg\" alt=\"\" \/><br \/>\n.ahh!! they have to stop putting so many of these wonderful flicks on in one day\u2026it is like overeating a Holiday lasagna or a great big pizza\u2026you just can\u2019t stop\u2026 the scenery, the talented actors and cinematographers,beautiful music and sights and\u00a0 the romance Italian style\u2026<br \/>\nBut alas all good things come to an end..here is one of today\u2019s favorite recipes and one of my favorite recipes for V Day..<br \/>\n<strong>Risotto with Strawberries &amp; Champagne<\/strong><br \/>\n<img data-recalc-dims=\"1\" height=\"235\" width=\"300\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.comefare.com\/files\/2010\/01\/risotto-con-fragole-300x235.jpg?resize=300%2C235\" alt=\"\" \/><br \/>\n(photo credits: <a href=\"http:\/\/www.comefare.com\">www.comefare.com<\/a>)<br \/>\n<strong>copyright 2011 Art of Living,PrimaMedia,Inc\/Maria Liberati<\/strong><br \/>\n<em><strong>(From the Gourmand World Cookbook Award Winning Book: The Basic Art of Italian Cooking: Holidays &amp; Special Occasions-2<\/strong><\/em><sup><em><strong>nd<\/strong><\/em><\/sup><em><strong> edition <\/strong><\/em><br \/>\n*4 cups vegetable broth<br \/>\n3* tablespoons olive oil<br \/>\n*2 leeks chopped finely<br \/>\n*1 cup arborio or carnaroli rice<br \/>\n*1 tablespoon butter (unsalted)<br \/>\n*pinch of salt<br \/>\n*1 cup Prosecco, Spumante or sparkling,dry, white wine<br \/>\n*10 ounces fresh strawberries, washed and cut in half<br \/>\nHeat vegetable broth till boiling. Place olive oil in large saute pan. Place in chopped leeks and saute till leeks are just about golden. Place in rice and toast till rice is coated with oil and all liquid is evaporated. Add in Champagne or Sparkling wine first.. Stir till all liquid is evaporated. Place in \u00bd cup of vegetable broth and stir till all liquid is evaporated and repeat placing in \u00bd cup liquid til evaporated till rice is al dente (approximately 15 minutes).<br \/>\nPuree strawberries. When rice is almost done, place in strawberry puree. Stir in well. Remove from heat. Let stand for 2 minutes. Place 1 tablespoon of butter on top and stir till melted. Serve and donlt forget to top with grated parmigiana-reggiano cheese.
