Here is today\u2019s lunch..<br \/>\n<strong>Pasta e Fagioli Borlotti (Borlotti Bean Soup)<\/strong><br \/>\n<a class=\"thickbox\" href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/12\/pasta-e-fagioli-borlotti.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"background-image: none; padding-left: 0px; padding-right: 0px; display: inline; padding-top: 0px; border: 0px;\" title=\"pasta-e-fagioli borlotti\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/12\/pasta-e-fagioli-borlotti_thumb.jpg?resize=244%2C195&#038;ssl=1\" alt=\"pasta-e-fagioli borlotti\" width=\"244\" height=\"195\" border=\"0\" \/><\/a><br \/>\n<strong>excerpted from <em>The Basic Art of Italian Cooking: DaVinci Style<\/em> available in print <a href=\"https:\/\/www.marialiberati.com\">here<\/a> or in digital version exclusively on Kindle<\/strong><br \/>\n8 ozs. freshly made egg noodles<br \/>\n1 cup borlotti beans (dry and soaked overnight, cooked in water for 1hr)<br \/>\n2 carrots<br \/>\n2 tomatoes<br \/>\n1 leek<br \/>\n1 stalk celery chopped<br \/>\n2 whole cloves garlic<br \/>\n3 tblsps extra virgin olive oil<br \/>\nPlace oil in a large pot and place in garlic and chopped leeks Then saute for 3 minutes.<br \/>\nPlace in 5 cups (2 \u00bd liters) hot vegetable broth, carrots, tomatoes, bring to a boil and\u00a0 simmer place in beans, cook till tender, at least 20 minutes. Boil again and then place in fresh pasta and cook for 5-8 minutes ,and cook for 20 more minutes. Add salt and freshly ground black pepper to taste. Serve and top with a drizzle of olive oil. and freshly grated parmigiano reggiano cheese<br \/>\n<strong>Torta Paradiso (Heavenly Cake)<\/strong><br \/>\n<a class=\"thickbox\" href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/12\/torta-paradiso.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"background-image: none; margin: 0px; padding-left: 0px; padding-right: 0px; display: inline; padding-top: 0px; border: 0px;\" title=\"torta paradiso\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/12\/torta-paradiso_thumb.jpg?resize=244%2C184&#038;ssl=1\" alt=\"torta paradiso\" width=\"244\" height=\"184\" border=\"0\" \/><\/a><br \/>\n1 cup (200 gr) butter<br \/>\n\u00be cup (120 gr)confectioner&#8217;s sugar<br \/>\n\u00bc cup(60 gr) flour<br \/>\n1\/3 cup (70 gr) potato starch<br \/>\n1 egg + 1 egg yolk<br \/>\ngrated zest of one lemon<br \/>\nextra confectioner&#8217;s sugar for topping<br \/>\nPlace softened butter in a bowl and whip till a creamy consistency, add in confectioner&#8217;s sugar a little at a time. Beat 1 egg + 1 yolk in another bowl till creamy. Add in butter mixture. When well blended add in grated lemon zest, then sift into mixture the flour and potato starch. Mix till well blended.<br \/>\nButter a 9\u201d cake pan.\u00a0 Pour in batter.
