{"id":359,"date":"2008-10-09T18:26:45","date_gmt":"2008-10-09T18:26:45","guid":{"rendered":"http:\/\/marialiberati.com\/blog2\/?p=359"},"modified":"2008-10-09T18:26:45","modified_gmt":"2008-10-09T18:26:45","slug":"antipasto-anyone","status":"publish","type":"post","link":"https:\/\/marialiberati.com\/freshsite\/2008\/10\/09\/antipasto-anyone\/","title":{"rendered":"Antipasto anyone??"},"content":{"rendered":"<p><a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2008\/10\/vellutata-di-carote-1.jpg?ssl=1\" title=\"vellutata-di-carote-1.jpg\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2008\/10\/vellutata-di-carote-1.thumbnail.jpg?ssl=1\" alt=\"vellutata-di-carote-1.jpg\" \/><\/a>These days I have been busy putting together \u00a0recipes for the Feast Your Eyes campaign\u00a0of \u00a0the American Academy of Ophthalmologists and Eye Care America as I\u00a0am serving as a media spokesperson for this event.<br \/>\nThe recipes have to be &#8216;yummy&#8217; but they also have to contain ingredients that are healthy for your eyes.\u00a0 Since it&#8217;s getting to be that time of year when Holiday Parties are on everyone&#8217;s mind, I decided to put together healthy appetizers.<br \/>\nThis first healthy appetizer makes agreat dip (and donlt tell nayone but it is contains many ingredients that are\u00a0healthy for your eyes):<br \/>\n<strong>Crema Di Carote<\/strong> (Carrot Cream Appetizer)<br \/>\n*2 lbs of carrots<br \/>\n*2 cups of vegetable broth or boullion<br \/>\n*pinch of nutmeg<br \/>\n*pinch of hot pepper<br \/>\n*4 tblsps of grated parmigiano-reggiano cheese<br \/>\n*1\/3 cup of pitted black olives<br \/>\n*8 slices of crusty Italian bread<br \/>\n*1 tblsps of extra virgin, cold pressed olive oil<br \/>\n*1 tblsps of unsalted butter<br \/>\n*pinch of salt and pepper to taste<br \/>\nWash, peel and cut carrots into large pieces. Bring broth to a boil. Place in carrots and cook for 20 minutes. When finished, pour liquid and carrots into a bowl and mash carrots with fork and mix with liquid.<br \/>\nIn a saut\u00e9 pan, place in oil, warm on low heat for 30 seconds. Place in mashed carrots, add in butter and grated cheese. Sprinkle with a pinch of salt, pepper, nutmeg. Cook for 2 minutes and mixing continuously with wooden spoon so mixture does not stick.<br \/>\nRemove from heat. Divide cream onto 4 small appetizer dishes. Garnish with black olives on side of dish.
