I spoke to award winning recording artist Coolio this summer. Coolio wanted to share with me\u00a0the\u00a0premiere of\u00a0 his own cooking show on The Oxygen network starting in October<br \/>\n\u00a0Coolio\u00a0has a\u00a0\u00a0<font face=\"Arial\">cutting edge beats and West Coast style of hip hop has garnered a huge loyal following. From starring in major blockbuster movies in Hollywood , to Grammy Award winning tracks, this platinum-selling artist has always kept it real.\u00a0 His new reality show, <strong><span style=\"font-weight: bold\">&#8220;Cooking with Coolio&#8221;<\/span><\/strong> \u00a0to debut on <strong><span style=\"font-weight: bold\">The Oxygen Channel<\/span><\/strong> this fall, will only broaden his fan base as viewers get to watch him as a family man with his children in tow.\u00a0 His new upcoming CD project, entitled, <strong><span style=\"font-weight: bold\">&#8220;Steal Hear&#8221;<\/span><\/strong> coyly explains a career which has spanned decades.<\/font><br \/>\nHere is part of the interview that appears in The Basic Art of Italian Cooking by Maria Liberati tm ezine this month at <a href=\"http:\/\/marialiberati.com\/newsletters\/2008\/october\/october2008.htm\">:http:\/\/marialiberati.com\/newsletters\/2008\/october\/october2008.htm<\/a><br \/>\n<strong>Maria Liberati:What is in your refrigerator now? (Can be someone dead or alive, in the past or present<\/strong>)?<br \/>\n<strong>C:My mother<\/strong><br \/>\n<strong>ML:*What would you serve or what would be on the menu? <\/strong><br \/>\n<strong>C: Steak, potatoes, tomatoes and mozzarella with avocados, spinach, and peach cobbler<\/strong><br \/>\nAlthough I did not get Coolio&#8217;s favorite recipe-Here is one of my favorite recipes for peach cobbler Italian style. It is less calories than the traditional one and uses less sugar and butter.<br \/>\n<strong><em>Pesche Imbotite (stuffed peaches)<\/em><\/strong><br \/>\n5 whole peaches<br \/>\nJuice of 1 lemon<br \/>\n\u00a03 tblsps brown sugar<br \/>\n2 cups of amaretti cookies crumbles<br \/>\n1\/3 cup of European style butter unsalted<br \/>\n1\/4 cup amaretto liqueuer or almond liqueur (optional)<br \/>\nWash, Peel, halve peaches, remove pit. Plae in large bowl and squeeze lemon juice on top. Soak fora bout 10 minutes in lemon juice.<br \/>\n\u00a0In seperate bowl, place cookie crumbs, soft butter,sugar. Mix well.<br \/>\nButter a casserole pan and plae in peach halves, fill peach halves with cookie mixture and splash liqueur over peach halves.
