It was also the sweetest can of tomatoes I ever opened\u2026 not because they were\u00a0 San Marzano tomatoes..but because they were one of the last ingredients found in my aunt\u2019s kitchen the day she passed away, almost a year ago.<br \/>\nThe can weighed just as heavy on my kitchen shelf as her loss weighed on my heart. It almost seemed that as long as the can was there ,she was here , at least in spirit. But today I was finally able to bring myself to open this 5 lb can of tomatoes and\u00a0 making 10 small containers of sauce.<br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/06\/open-can-tomatoes.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-2969\" title=\"Open Can of Tomatoes\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/06\/open-can-tomatoes-150x150.jpg?resize=150%2C150&#038;ssl=1\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><br \/>\nAs the can opener whirled around this gigantic lid, I found myself staring inside almost thinking that something else would be inside. Her life ,her face, quickly glimmered in my mind. But all that appeared inside the can\u00a0 were these beautiful fragrant, red ripe tomatoes. She would have approved these for a tomato sauce.The aroma was haunting. True to her last words, \u201cPlease don\u2019t ever forget me\u201d. This sauce will produce even more reasons to reminisce about her ..now I have this empty can that I absolutely can not trash.Who knows maybe I will put a tomato plant inside\u2026<br \/>\n<strong>Spaghetti with Red Clam Sauce<\/strong><br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/06\/spaghetti-alla-vongole-tomato-sauce.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-2970\" title=\"spaghetti alla vongole tomato sauce\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/06\/spaghetti-alla-vongole-tomato-sauce-150x150.jpg?resize=150%2C150&#038;ssl=1\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><br \/>\n1 lb baby clams<br \/>\n4 tblsps olive oil<br \/>\n2 cloves minced garlic<br \/>\n2 tblsps finely chopped parsley<br \/>\n1 14 oz can peeled tomatoes<br \/>\n1\/2 tsp salt<br \/>\n1\/2 tsp pepper<br \/>\n1 lb spaghetti<br \/>\nSteam clams for 2 minutes. Discard clams that remian closed.\u00a0 Set liquid aside. Remove clams from shells,\u00a0leavea few intact for\u00a0plate\u00a0 garnish.\u00a0 Place oilive oil in saucepan with garlic. Saute till garlic begins to turn golden.\u00a0 Add in chopped parsley, liquid from clams. Suate until liquid has evaporated. Add in clams, tomatoes. Simmer for 20-25 minutes. Cook pasta in boiling salted water till al dente. Drain.
