{"id":2738,"date":"2011-03-19T17:55:49","date_gmt":"2011-03-20T00:55:49","guid":{"rendered":"https:\/\/www.marialiberati.com\/?p=2738"},"modified":"2011-03-19T17:55:49","modified_gmt":"2011-03-20T00:55:49","slug":"milan-davinci-and-a-recipe-for-charlotte-alla-milanese","status":"publish","type":"post","link":"https:\/\/marialiberati.com\/freshsite\/2011\/03\/19\/milan-davinci-and-a-recipe-for-charlotte-alla-milanese\/","title":{"rendered":"A Recipe From DaVinci&#039;s Cookbook &#124; Charlotte Alla Milanese"},"content":{"rendered":"\n<p><\/p>\n\n<p><a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/03\/Milano-italy1.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-2744\" title=\"Milano italy\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/03\/Milano-italy1-150x150.jpg?resize=150%2C150&#038;ssl=1\" alt=\"\" width=\"150\" height=\"150\"\/><\/a><\/p>\n<p>From &nbsp;the elegant city of Milan comes this elegant, yet simple dessert..Charlotte Alla Milanese&#8230;. it\u2019s a great way to make use of day old crusty bread and an elegantly simple dessert\u2026<\/p>\n<p><strong>This recipe comes from my upcoming release The Basic Art of Italian Cooking: DaVinci Style<\/strong><\/p>\n<p>It includes recipes that were influenced by DaVinci\u2019s life and travels.&nbsp; Leonardo was a foodie of his time and used dishes from his favorite cookbook of his day to paint the meal for the Last Supper and other famous masterpieces.&nbsp;The royal Sforza family of Milan were one of his many patrons&nbsp; so he lived in and worked in Milan for some time.&nbsp;This recipe is an old, traditonal Milanese dish, still great today!<\/p>\n<p>&nbsp;<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/03\/charlotte-alla-milanese.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-2745\" title=\"charlotte alla milanese\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/03\/charlotte-alla-milanese-150x150.jpg?resize=150%2C150&#038;ssl=1\" alt=\"\" width=\"150\" height=\"150\"\/><\/a><\/p>\n<p><strong>Charlotte alla Milanese<\/strong><\/p>\n<p>from <em>The Basic Art of Italian Cooking: DaVinci Style<\/em> (release date 09\/11)<\/p>\n<p>2 lbs (1 kilo) Granny Smith apples<\/p>\n<p>1 cup (200 gr) granulated sugar<\/p>\n<p>1\/3 cup (80 gr) raisins<\/p>\n<p>3 tblsps (45 grams) pinoli nuts<\/p>\n<p>1 lemon<\/p>\n<p>\u00be cup (150 gr) dry white wine<\/p>\n<p>3 tblsps butter (left out at room temperature)<\/p>\n<p>day old baguettte or crusty bread<\/p>\n<p>dry white wine<\/p>\n<p>\u00bd cup rum<\/p>\n<p>Place raisins in warm water. Let soak for 20 minutes. Then drain and squeeze out water. Let dry on paper towels. Cut bread into thin slices. Set aside.<\/p>\n<p>Peel, core, slice apples. Place in saucepan with \u00be cup sugar (150 gr), \u00be cup (150 gr)dry white wine, lemon peel, enough water to cover. Cook till apples&nbsp;are al dente. Drain and let apples dry on paper towels.<\/p>\n<p>In a bowl, place 3 tblsps butter, remaining sugar. Blend till softened into a soft creamy texture.<\/p>\n<p>Using a pastry brush, brush butter cream onto the sides of an angel food cake or charlotte pan. Then place bread slices on top of butter. Then fill in alternating apple slices with raisins and pinoli nuts. Pour a spritz of rum on each layer of fruits and nuts. Finish by topping with a layer of bread slices, Brush remaining butter cream on top of bread slices and bake in preheated oven at 350 degrees F (180 degrees C)&nbsp;for 1hour.
