But a 2 hour trek in the mountains brings about a ravenous appetite also..<br \/>\nToday&#8217;s Lunch and\u00a0 Recipe<br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/01\/tomato-risotto6.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-2523\" title=\"risotto with beans\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/01\/tomato-risotto6-150x150.jpg?resize=150%2C150&#038;ssl=1\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><br \/>\n<strong>Risotto della Volpe ( Risotto of the Wolf)<\/strong><br \/>\n*2 cups of arborio rice<br \/>\n*1 cup of fresh or frozen peas<br \/>\n*1 cup of speckled beans<br \/>\n*5 tablespoons plain tomato sauce<br \/>\n*4 slices of fontina cheese sliced in strips<br \/>\n*2 slices of provolone cut into strips<br \/>\n*1 small onion<br \/>\n*1\/2 tblsp unsalted butter<br \/>\n*1\/2 tblsp extra virgin olive oil<br \/>\n*3-4 tablespoons parmigiana-reggiano cheese grated<br \/>\n*pinch of salt<br \/>\nFor the broth<br \/>\n*4 cups water<br \/>\n*1 celery stick<br \/>\n*1 carrot<br \/>\n*1 onion<br \/>\nPlace water in large pot.Add in\u00a0vegetables (all except onion) that have been washed, and cook for 20 minutes. Chop onion and place in saute pan with olive oil. When golden, add in rice and toast the rice for a few minutes.\u00a0Then add in fresh peas and \u00bd cup broth. After approx 9 minutes add in speckled beans and tomato sauce. Keep adding in broth \u00bd cup at a time as needed, till rice is al dente (approx 18 minutes total). When finished, add in cheese and stir till melted.
