Recently I have passed many of the very places he lived in and his writing has also inspired me&#8230;here is a lobster recipe (unfortunately not a salad). But you can serve this with champagne or a dry Prosecco.<br \/>\n<strong>Velvety Lobster &amp; Fennel Soup<\/strong><br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/01\/creamy-lobster-soup.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-2518\" title=\"creamy lobster soup\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/01\/creamy-lobster-soup-150x150.jpg?resize=150%2C150&#038;ssl=1\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><strong><\/strong><br \/>\n*2 celery sticks, chopped<br \/>\n*2 lbs fennel<br \/>\n*1 onion<br \/>\n*2 tblsps unsalted butter<br \/>\n*4 ounces steamed lobster meat<br \/>\n4 cups vegetable broth<br \/>\n*1\/4 cup cream<br \/>\n*zest of 1 lime<br \/>\n*salt and pepper to taste<br \/>\n\u00a0Wash and finely chop celery, peel onion and dice. Chop \u00bd of the fennel, setting aside the green top part.<br \/>\nPlace\u00a01 tablespoon butter in a soup pot, saute chopped fennel, onion and celery till golden brown. Place in broth. Bring to a boil, lower heat and simmer over low heat for 15 minutes.<br \/>\n\u00a0Cut the rest of the fennel (except top green parts) into small stick like slices. Place in saute pan with 1 tblsp butter, saute for 4 minutes.<br \/>\nPlace soup in food processor till it is a velvety, creamy mixture. Pour into\u00a0 soup pot again \u00a0and add in cream. Simmer over low heat, stirring every so often.<br \/>\nAdd lobster meat to sauteed fennel. Saute for 2-4 minutes over low heat. Add in lime zest and dash of salt and pepper to taste. Chop green part of fennel bulb and set aside.<br \/>\nDivide soup mixture into 4-6 soup bowls.
