To\u00a0get some after lunch exercise I was invited\u00a0 \u00a0to take an afternoon drive and walk in the ancient town of Alba Fucens..set up by the Romans with remnants of houses and the original city remaining..while walking up the steep mountain\u00a0\u00a0we reached a \u00a0view and\u00a0 peaceful quiet that \u00a0was also quite remarkable..<br \/>\nA coconut dessert that is also gluten free went perfect with the a cup of espresso\u00a0after an fascinating walk through this ancient treasure.<br \/>\n<strong>Coconut Dessert<\/strong><br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/01\/coconut-shredded.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-2570\" title=\"coconut shredded\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2011\/01\/coconut-shredded-150x150.jpg?resize=150%2C150&#038;ssl=1\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><br \/>\n(approx 8 servings)<br \/>\n*1 cup rice flour-<br \/>\n*1 cup coconut flour<br \/>\n*3\/4 cup sugar<br \/>\n*4 ozs butter<br \/>\n*5 medium eggs<br \/>\n*1 tsp baking powder gluten free<br \/>\n*1 lemon<br \/>\n*extra butter to butter pan<br \/>\n*pinch of salt<br \/>\n*Powdered sugar<br \/>\nSeparate eggs and set whites aside. Beat egg yolks, sugar into a cream. Add in softened butter and lemon zest and beat again. In separate bowl place in flours and baking powder. Add into egg yolk mixture a little at a time. In separate bowl beat egg whites, pinch of salt to firm peaks. Then fold egg whites into mixture. Butter and flour with rice flour or potato starch a square or round 8 \u201c cake pan. Place in batter.
