But in Sicily a dish of couscous is commonly served as\u00a0 first course as is a pasta dish. Here\u2019s my\u00a0 recipe for an\u00a0 easy to make, bright, fragrant couscous dish. Use\u00a0 <a href=\"https:\/\/www.marialiberati.com\/products-page\/food-products\/meyer-lemon-oil\/\">Meyer Lemon oil<\/a> to emphasize the fresh lemon taste.<br \/>\n\u00a0<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/10\/lemoncouscous.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"display: inline; border: 0px;\" title=\"lemon couscous\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/10\/lemoncouscous_thumb.jpg?resize=164%2C164&#038;ssl=1\" border=\"0\" alt=\"lemon couscous\" width=\"164\" height=\"164\" \/><\/a><br \/>\n<strong>Lemony Couscous<\/strong><br \/>\n1 cup couscous<br \/>\n1 1\/4 cups water<br \/>\n1\u00a0 teaspoon <a href=\"https:\/\/www.marialiberati.com\/products-page\/food-products\/meyer-lemon-oil\/\">Meyer Lemon\u00a0 Oil<\/a><br \/>\n1 tablespoons extra virgin olive oil<br \/>\n3\/4 tsp sea salt or kosher salt<br \/>\n1\/2 cup shopped scallions<br \/>\n1\/4 cup chopped leeks<br \/>\n1 fresh garlic clove minced<br \/>\nfinely grated peel of 1 fresh lemon<br \/>\n1\/4 tsp of freshly ground black pepper<br \/>\nIn a saucepan (2-3 quart size) heat water till boiling. Add in couscous when boiling with sea or kosher salt. Cover and reduce heat. Simmer for approximately 10 minutes, stirring once.<br \/>\nPlace Extra virgin Olive Oil in small saute pan. Place in scallions, leeks, garlic and saute on low to medium heat for 3 minutes or until leeks &amp; scallions, garlic, have just begun to turn golden. Stir in lemon peel. Remove from heat.<br \/>\nDrain couscous. Place couscous in saute pan with garlic mixture. Toss gently, drizzle with <a href=\"https:\/\/www.marialiberati.com\/products-page\/food-products\/meyer-lemon-oil\/\">Meyer Lemon Oil.<\/a>Serve and top with freshly ground black pepper.
