Preheat oven to 400 degrees.<br \/>\nPre-cut potatoes save time, however they are fresher when self prepared. Use a potato peeler to peel the potatoes and cut into pieces about 3 inches long and \u00be inches thick.<br \/>\nGrind cinnamon, oregano and coriander with a spice grinder. In a large bowl, mix cut potatoes with seasoning. Add as much as you want, depending on the flavor you want. \u00a0Add a teaspoon of oil and tablespoon water to help blend the seasoning and potatoes.<br \/>\nPlace potatoes on cookie sheet, drizzle another tablespoon olive oil on top and bake for 20 minutes. Remove from oven, turn and bake for another 5 minutes or until brown on top.
