This recipe makes 4 servings<br \/>\n<strong>Shopping list<\/strong> :<br \/>\n*3 pounds fresh red, ripe tomatoes<br \/>\n*Extra virgin olive oil<br \/>\n*1 loaf crusty bread-day old<br \/>\n*1 fresh red pepper<br \/>\n*1 fresh cucumber<br \/>\n*white vinegar<br \/>\n*2 cloves fresh garlic<br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/06\/gazpacho-2.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-1906\" title=\"gazpacho 2\" alt=\"\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/06\/gazpacho-2-150x150.jpg?resize=150%2C150&#038;ssl=1\" width=\"150\" height=\"150\" \/><\/a><br \/>\n<strong>Gazpacho<\/strong><br \/>\nIn a bowl place<strong> 1 cup of day old crusty bread that has been cut into cubes and soak<\/strong> with <strong>1 tablespoon of vinegar, 2 cloves minced garlic, 4 tablespoons of extra virgin olive oil.<\/strong> Mix with a wooden spoon or hands and let sit for 30 minutes.<strong> <\/strong>Wash,cut into cubes,<strong> 3 pounds of red ripe tomatoes. Cut into cubes 1 cucumber and one red pepper. Set aside. In a food processor, blend together into a soup like consistency the cubed veggies and the soaked bread mixture. Place in refrigerator for an hour to chill.
