{"id":1893,"date":"2010-06-06T06:49:40","date_gmt":"2010-06-06T13:49:40","guid":{"rendered":"https:\/\/www.marialiberati.com\/?p=1893"},"modified":"2010-06-06T06:49:40","modified_gmt":"2010-06-06T13:49:40","slug":"the-guitar-a-love-story","status":"publish","type":"post","link":"https:\/\/marialiberati.com\/freshsite\/2010\/06\/06\/the-guitar-a-love-story\/","title":{"rendered":"The Guitar..a Love Story.."},"content":{"rendered":"<p>copyright 2010, art of living, PrimaMedia,Inc\/Maria Liberati<br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/06\/chitarra.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"display: inline; border: 0px;\" title=\"chitarra\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/06\/chitarra_thumb.jpg?resize=244%2C113&#038;ssl=1\" border=\"0\" alt=\"chitarra\" width=\"244\" height=\"113\" \/><\/a><br \/>\nThey say that the\u00a0 guitar is a\u00a0 romantic instrument\u2026this could not be truer than in Abruzzo..where every kitchen has one..well sort of ..I mean\u2019 la chitarra\u2019 the instrument called so because of it\u2019s similar wooden frame and steel thin wires.. responsible for some of my great loves..\u2019pasta a la chitarra\u2019 the dish that began my love affair with pasta..and\u2026(well wait more to come)\u2026<br \/>\nOn special Sunday mornings I would watch as my nonna..\u2019strummed\u00a0 that pasta\u00a0 dough into a culinary creation..with the dexterity of a musician.(not to mention the passion).each piece would look like a perfect piece of art..I remember the dishes of \u2018pasta a la chitarra\u2019 covered with just a splash of tomato sauce and a dusting of parmigiana-reggiano..a prettier picture there could not be\u2026<br \/>\nFlash forward to\u2026..A warm summer night.. in the mountains of Abruzzo..eating al fresco on the terrace of a mountainside resort\u2026\u2019pasta a la chitarra con tartufi\u2019 (with truffles)..the first meal I had with my fiance\u2026it was love at first sight..the pasta or him..or both..<br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/06\/spaghettiallachitarra.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"display: inline; border: 0px;\" title=\"spaghetti-alla-chitarra\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/06\/spaghettiallachitarra_thumb.jpg?resize=244%2C192&#038;ssl=1\" border=\"0\" alt=\"spaghetti-alla-chitarra\" width=\"244\" height=\"192\" \/><\/a><br \/>\nHere\u2019s a recipe..<br \/>\n2 cups semoilina flour<br \/>\n2 cups all purpose flour<br \/>\n4 eggs<br \/>\n4 tblsps extra virgin olive oil<br \/>\ntepid water as needed<br \/>\nOn pastry board, place flour and make a well in center. Place in eggs, olive oil and pinch of salt, spoonful of water. Begin to work in the ingredients by hand. Working the dough until a smooth ball is formed. If needed add a little more water to make dough smooth. If dough is too sticky sprinkle a bit more flour on the surface. Knead dough for 15 minutes. Form into a ball and leave covered in bowl for 15 minutes. Sprinkle semolina flour on pastry board and roll dough out to a thin pasta dough. Once the dough is rolled out cut it into sheets the length of your \u2018chitarra\u2019. Place sheet on top of chitarra and roll with a rolling pin. Run your fingers over exposed strings at end of chitarra and pasta will fall to bottom of the chitarra. Let pasta dry on sheet sprinkled with semolina flour for approximately 1 hour. Then cook pasta for a 2-3 minutes or until al dente in lightly salted boiling water.
