It is one of my favorites and it is just as healthy for you as it is delicious&#8230;<br \/>\nIt&#8217;s from my next book The Basic Art of Italian Cooking-Holidays and Special Occasions<br \/>\n<strong>Farfalle con\u00a0 Ricotta<\/strong><br \/>\n1 lb of butterfly (farfalle) pasta<br \/>\n8 ounces of frozen or fresh (washed and chopped) spinach<br \/>\n1 small onion finely chopped<br \/>\n\u00bd cup ricotta (regular or low fat)<br \/>\n1 tablespoon of chopped fresh parsley<br \/>\n2 fresh basil leaves<br \/>\n1 tsp of\u00a0 fresh or dried oregano<br \/>\nPinch of nutmeg<br \/>\n1\/2 cup of dry white wine<br \/>\n4 tblsps of olive oil<br \/>\nPinch of salt<br \/>\nPinch of pepper<br \/>\n2 tblsps of milk<br \/>\n3 tsps of kosher salt<br \/>\nHeat oil in saucepan and saut\u00e9 onions till just golden. Saute for 1 minute. Add in white wine and let liquid evaporate for 1 minute. Add in spinach and the ricotta. Stir while mashing ricotta with fork.<br \/>\nAdd in milk, salt and pepper to taste. Let cook for 10 minutes.<br \/>\nBring 6 cups of\u00a0 water to boil for pasta. Add in kosher salt. Add in pasta and stir with wooden spoon. Cook for 8 minutes or time indicated on package.<br \/>\nDrain pasta and add into ricotta sauce.
