This works well as an appetizer or as a light dinner to be eaten on the terrazzo\u00a0 \u2018al fresco\u2019\u2026 on a warm summer night with a loaf of crusty whole grain bread and a glass of chilled white wine. ( Falenghina, or Est!Est!Est!)<br \/>\n<strong><em>Baked Tomatoes with Gouda<\/em><\/strong><br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/05\/Cheddar_Broiled_Tomatoes.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"display: inline; border: 0px;\" title=\"Cheddar_Broiled_Tomatoes\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/05\/Cheddar_Broiled_Tomatoes_thumb.jpg?resize=244%2C163&#038;ssl=1\" border=\"0\" alt=\"Cheddar_Broiled_Tomatoes\" width=\"244\" height=\"163\" \/><\/a><br \/>\n3 large tomatoes (washed)<br \/>\n4 tablespoons of extra virgin olive oil<br \/>\n2 garlic cloves chopped finely<br \/>\n4 ounces <a href=\"http:\/\/www.beemstercheese.com\/en-US\/the-cheeses\/beemsterlite-matured\/\">gouda<\/a> cheese<br \/>\n3 leeks finely chopped<br \/>\nPreheat oven to 350 degrees. Cut tomatoes in half. Grease a baking pan with 1 tablespoon of the oil, spread in pan\u00a0 with clean fingers. Place tomato halves in greased pan On each tomato half place 1 tsp of olive oil.\u00a0 Warm 2 tablespoons olive oil in\u00a0 saute\u00a0 pan.\u00a0 Saute finely chopped garlic with finely chopped leeks over low heat, just until golden. Remove from heat, place garlic mixture on top of tomato halves divided evenly. Bake tomatoes for 10 minutes. Grate <a href=\"http:\/\/www.beemstercheese.com\/en-US\/the-cheeses\/beemsterlite-matured\/\">Gouda<\/a> cheese and place on top of tomato halves place under broiler until cheese is bubbly.
