{"id":1767,"date":"2010-04-08T22:45:22","date_gmt":"2010-04-09T05:45:22","guid":{"rendered":"https:\/\/www.marialiberati.com\/?p=1767"},"modified":"2010-04-08T22:45:22","modified_gmt":"2010-04-09T05:45:22","slug":"dinner-pasta-and-fellini","status":"publish","type":"post","link":"https:\/\/marialiberati.com\/freshsite\/2010\/04\/08\/dinner-pasta-and-fellini\/","title":{"rendered":"Dinner, Pasta and Fellini"},"content":{"rendered":"<p>copyright 2010, Maria Liberati<br \/>\n\u201cLife is a combination of magic and pasta\u201d a saying of the late film director Federico Fellini..and it is so true\u2026<br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/04\/FedericoFellini.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"display: inline; border: 0px;\" title=\"FedericoFellini\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/04\/FedericoFellini_thumb.jpg?resize=244%2C195&#038;ssl=1\" border=\"0\" alt=\"FedericoFellini\" width=\"244\" height=\"195\" \/><\/a><br \/>\nFellini was from Rimini in the north of Italy but a trip to the Eternal City when he was a young boy changed his life forever\u2026he was enamored with\u00a0 Rome..its\u2019 people. its\u2019 food, its\u2019 flavors,its\u2019 sights, the magic..and so the films of Federico Felllini were born.<br \/>\nI have walked\u00a0 past and stopped at many of his old haunts in Rome\u00a0 and wonder what it would have been like to have dinner with him and his delightful wife, actress Giuliana Massina\u2026a Sunday\u00a0 dinner ..you know first a\u2019 passeggiata\u2019 on Via Margutta..known for their antiques stores and one of his favorite neighborhoods.<br \/>\nAnd then heading over to <a href=\"http:\/\/trifter.com\/europe\/italy\/dinner-in-rome-italy-at-sora-lellas-restaurant\/\">Sora Lella\u2019s<\/a> restaurant\u00a0 for a typical Roman pasta dish -Pasta a la Matriciana\u00a0 (a specialty of the restaurant)\u2013 accompanied by a glass of Montepulciano&#8230;.entertained by the intense flavors of the pasta and the interesting stories of Fellini and his\u00a0 wife Giuliana and the cinematic\u00a0 memories of Sora Lella herself\u2026..that would be truly magic and pasta. And the evening\u2019s dinner would finish with a stroll .. under a serene\u00a0 Roman evening sky\u2026.to\u00a0 coffee bar Giolitti\u00a0 for a sweet taste of gelato\u2026.and an espresso\u00a0 at <a href=\"http:\/\/trifter.com\/practical-travel\/world-cuisine\/a-trip-to-caffe-greco-in-rome-italy\/\">Caffe Greco<\/a>..as famous for its\u2019 coffee as its\u2019creative \u2018literati\u2019 customers.<br \/>\nI hope we could fit a quick tour of Cinecitta (the original studios in Rome where he filmed most of his movies) in before dinner..<br \/>\nAn imaginary dinner\u2026 but here is the real Pasta a la Matriciana<br \/>\n<em><strong>La Matriciana<\/strong><\/em><br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/04\/pastalamatriciana.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"display: inline; border: 0px;\" title=\"pasta la matriciana\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/04\/pastalamatriciana_thumb.jpg?resize=244%2C184&#038;ssl=1\" border=\"0\" alt=\"pasta la matriciana\" width=\"244\" height=\"184\" \/><\/a><br \/>\n<strong><em>(from <a href=\"https:\/\/www.marialiberati.com\/store\/page4.html\">The Basic Art of Italian Cooking: Holidays &amp; Special Occasions<\/a> winner of the Best Italian Cuisine Book in the USA)<\/em><\/strong><br \/>\nfor 4 people<br \/>\n*1 lb of pasta (spaghetti, bucatini,rigatoni)<\/p>\n<ul>\n<li>\u00bd onion<\/li>\n<li>1 clove of garlic<\/li>\n<li>\u00bc pound bacon (optional), cut into thin strips<\/li>\n<li>3 tblsps of extra virgin olive oil<\/li>\n<li>\u00bd cup of dry white wine with \u00bd tblsp of white wine vinegar<\/li>\n<li>5-6 leaves of fresh basil<\/li>\n<li>\u00bc of a dry, hot ,red pepper<\/li>\n<li>a pinch of black pepper<\/li>\n<li>2 lbs of ripe red plum tomatoes<\/li>\n<li>\u00bc cup of pecorino romano cheese freshly grated<\/li>\n<\/ul>\n<p>Place olive oil in saute pan and warm, place in bacon and chopped onion, hot red pepper, garlic .Saute until onion begins to become golden. Pour in wine and let liquid evaporate. Then add in the tomatoes that have been fileted (seeds removed) and fresh basil leaves.<br \/>\nSaute on medium heat for approx 20 minutes, stirring frequently.<br \/>\nCook the pasta till al dente. Drain and place in sauce, toss and place in half of the grated cheese, toss.
