The sun sparkled its\u2019 light brightly onto\u00a0 the leaves which seemed to shine in thank you to the sun.. Its\u2019 no wonder the olive oil here has long been known as liquid golf<br \/>\nLoreto-Aprutino-is famous for many things. But\u00a0 the\u00a0 Loreto-Aprutino DOC olive oil has been known throughout history as \u2018liquid gold\u2019..because of it\u2019s taste and color but also because most of the people in town earned their living from the olive oil they produced<br \/>\nThe perfect Spring recipe to use the Loreto-Aprutino DOC olive oil :<br \/>\nInsalata di Pollo al Limone<br \/>\n<a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/04\/insalatadipollo.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"display: inline; border: 0px;\" title=\"insalata di pollo\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/04\/insalatadipollo_thumb.jpg?resize=244%2C192&#038;ssl=1\" border=\"0\" alt=\"insalata di pollo\" width=\"244\" height=\"192\" \/><\/a><br \/>\n1 lb chicken breasts<br \/>\n2 lemons-squeezed and peeled (chop peel finely)<br \/>\n7-8 tablespoons of extra virgin olive oil<br \/>\n2 tablespoons apple cider vinegar<br \/>\n1 cup fresh strawberries washed and hulled<br \/>\n1 lb fresh asparagus tips steamed<br \/>\n2 lbs Scamorza Cheese (dried mozzarella)-cut into cubes<br \/>\n16 ounces of fresh salad greens (Any mix you like)<br \/>\n<strong>Dressing:<br \/>\n<\/strong>Mix 3\/4 cup\u00a0 strawberries, 2 tablespoons of apple cider vinegar, 3 tablespoons extra virgin olive oil. dash of salt and pepper to taste. Mix in blender or food processor.<br \/>\n<strong>Instructions:<\/strong><br \/>\nPlace chicken breasts in saute pan with 3 tablespoons of already warm olive oil,lemon peel. Saute on both sides till brown and cooked thoroughly. remove from heat. Place asparagus tips in 2 tablespoons of olive oil,.dash of salt and pepper for10 minutes to marinate..
