Paolo was a successful dentist living the fast life in the quick paced city of Milan&#8230;but when he began growing weary of city life Paolo and his family began looking for other options to get back to a simpler,slower way of life ..the way life was meant to be..in its&#8217; most natural state.<\/p>\n<p>Fast forward to the restoration of the organic vineyard and olive grove in the province of Le Marche, Italy in the small village of Ofida. <\/p>\n<p>My visit there on a bright sunny day in January was one for the diary of any true <b>gastronaut<\/b> (gastronomy and astronaut=gastronaut)..savoring organic olive oil produced from the olive trees that surrounded us&#8230;accompanied by organic wines produced by the vines that one could look out onto. <\/p>\n<p>Ahhh the true art of simplicity..a bottle of organic olive oil to drizzle with, freshly made organic bread, organic wine, a colorful dish&#160; of organic olives..and we had lunch&#8230;.<\/p>\n<p>A lunch that inspired free flowing conversation on the beauty of food..of course food in its most natural state..<\/p>\n<p>You can recreate my day at Fiorano in your own kitchen and create your own &#8216;staycation&#8217;for an hour or for a day ..I recommend some organic olive oil, freshly baked bread ,organic wine,artisan cheese, organic olives and the company of great friends..relaxing conversation and here&#8217;s a bit of scenery and a recipe for those olives and olive oil..<\/p>\n<div style=\"padding-bottom: 0px; margin: 0px; padding-left: 0px; padding-right: 0px; display: inline; float: none; padding-top: 0px\" id=\"scid:5737277B-5D6D-4f48-ABFC-DD9C333F4C5D:344ddf47-2bb8-48b5-b235-94aa12c53a31\" class=\"wlWriterEditableSmartContent\">\n<div><object width=\"425\" height=\"355\"><param name=\"movie\" value=\"http:\/\/www.youtube.com\/v\/Xk2VVg3JNgs&amp;hl=en\"><\/param><\/object><\/div>\n<div style=\"clear:both;font-size:.8em;\">Celebrity Chef Maria Liberati at Fiorano Vineyards<\/div>\n<\/div>\n<p>&#160;<\/p>\n<p>&#160;<\/p>\n<p>&#160;<\/p>\n<p>&#160;<\/p>\n<p><b>Pappardelle Al Tonno (pappardelle pasta with tuna)<\/b><\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/03\/pappardellepastawithtuna.jpg?ssl=1\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"border-bottom: 0px; border-left: 0px; display: inline; border-top: 0px; border-right: 0px\" title=\"pappardelle pasta with tuna\" border=\"0\" alt=\"pappardelle pasta with tuna\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/03\/pappardellepastawithtuna_thumb.jpg?resize=244%2C182&#038;ssl=1\" width=\"244\" height=\"182\" \/><\/a> <\/p>\n<p>&#160;<\/p>\n<p>&#160;<\/p>\n<p>For 4<\/p>\n<p>*1 lb of pappardelle pasta<\/p>\n<p>*16 ounces of tuna packed in water<\/p>\n<p>*1\/3 cup of pitted green olives<\/p>\n<p>*3 tablespoons of extra virgin,cold pressed, olive oil<\/p>\n<p>*1 garlic clove<\/p>\n<p>*1 handful of fresh parsley<\/p>\n<p>*pinch of sea salt<\/p>\n<p>Place pappardelle pasta in boiling water until al dente. Chop olives ,tuna, garlic finely with a mezzaluna or chopping knife. Place olive oil in large saut\u00e9 pan and heat for 30 seconds. Add in <\/p>\n<p>chopped ingredients and saute for 5 minutes or until garlic begins to turn golden. Remove from heat. Add in cooked pappardelle pasta and toss gently.
