It&#8217;s delicate sweetness..In its&#8217; gently effervescent sweetness also lies a hint of\u00a0 strawberries. But it is full bodied..I am speaking of\u00a0 <a href=\"http:\/\/www.wineloverspage.com\/italwineguide\/brachetto.phtml\">il Brachetto.<\/a><br \/>\nIt is a wine that can accompany desserts and pastries and cakes and pies. But you can also have an intense moment of enjoyment in drinking a glass of Brachetto without anything to accompany it.\u00a0 The Italians call\u00a0 Bracchetto &#8220;the wine that speaks&#8221;.\u00a0 A sparkling wine with gentle bubbles that do seem to speak to you, it is also a romantic beverage to enjoy..from its&#8217; red color to its&#8217; gentle sweet flavor\u00a0 to its&#8217; low alcohol content-make this a perfect choice for romantic dinners.<br \/>\nI first learned of\u00a0 Bracchetto at our New Year&#8217;s eve celebration in teh center of Rome-what could be more romantic then\u00a0bursting open a bottle of\u00a0 Braccheto open\u00a0under the stars and in front of the Coliseum\u00a0at midnight\u00a0while watching the fireworks display over the Roman Forum..\u00a0then\u00a0a romantic dinner for San Valentino \u00a0and the Summer holiday\u00a0 the 15th of August\u00a0 in Italy known as <a href=\"http:\/\/www.reidsguides.com\/destinations\/europe\/italy\/lazio\/rome\/rome_when.html\">Ferr&#8217;Agosto.<\/a><br \/>\n\u00a0Ahh!! there is nothing like a bottle of Bracchetto and fireworks with that special someone \u00a0on the beach in Italy in August..\u00a0<br \/>\nBut don&#8217;t wait until August, there is still time to have many romantic dinners to accompany your bottle of Bracchetto.<br \/>\nBracchetto or known as Bracchetto D&#8217;Acqui comes from the Piedmont region of Italy. It comes from a region that dates back to the time of the Romans in their production of aromatic wines.<br \/>\nServe bracchetto with appetizers, after dinner as well as with desserts. My favorite combination is Bracchetto with a dark chocolate dessert..now that is dark chocolate so\u00a0it is not too heavy on the sugar. The gentle sweetness\u00a0of the Bracchetto seems to complement the gentle\u00a0 sweetness of the\u00a0 dark chocolate.\u00a0<br \/>\nOh well enough of a description, you need to taste it. Here is a great appetizer to accompany\u00a0 your Bracchetto.<br \/>\nP.S. if you don&#8217;t know where to find it just email me at:<br \/>\n<a href=\"mailto:maria@marialiberati.com\">maria@marialiberati.com<\/a> and let me know what region\u00a0of the US you live in or where in the world you are.<br \/>\nThis is from my upcoming book<br \/>\n&#8220;The Basic Art of Italian Cooking-Holidays and Special Occasions&#8221; copyright, 2008 Maria Liberati.<br \/>\n<strong>Tortini ai Funghi<\/strong><br \/>\nFor 4 people:<br \/>\nIngredients:<br \/>\n2 scallions<br \/>\n\u00be lb of fresh mushrooms<br \/>\n2 tablespoons of butter<br \/>\nPinch of salt and black pepper<br \/>\nPinch of freshly grated nutmeg<br \/>\n1 large strip of puff pastry or 4 small strips<br \/>\n2 eggs<br \/>\n4 ounces of grated Comte cheese<br \/>\n3 leeks chopped finely<br \/>\n1 tbsp butter<br \/>\n4 small ceramic or glass baking or custard cups should be about 4 inches in diameter.<br \/>\n\u00a0Peel the scallions and chop finely. Wash carefully the mushrooms, clean and slice thinly.<br \/>\nPlace 1 tbsp of butter in a saut\u00e9 pan and saut\u00e9 the scallions over medium heat for 5 minutes. Then place in mushrooms and let simmer till all liquid has been absorbed.<br \/>\nPlace in a pinch of salt and pepper and let cool.<br \/>\nButter the baking cups. Place puff pastry in baking cups, cover bottom and sides of cups with pastry.\u00a0 Mix together in a bowl the eggs, pinch of nutmeg, pinch of salt, grated\u00a0 Comte cheese.<br \/>\nCover bottom of each baking cup (that has already been covered with puff pastry) with mushroom slices. Cover with chopped leeks. Then pour egg\/Comte mixture on top.<br \/>\nCook in oven preheated to 425 degrees for 10 minutes, then for another 10 minutes at 400 degrees.
