It is a difficult phrase\u00a0 for a &#8216;hyperactive&#8217; person like me to understand unless\u00a0I am \u00a0in Italy&#8230;<br \/>\n\u00a0Yesterday was the last day of the Christmas Holiday season here known as La Befana or the Epiphany.\u00a0 It was a day to appreciate that aforementioned saying..filled with going out for a stroll for a morning cappuccino..then coming home and spending time preparing the 2 pounds of\u00a0 fresh broccoli rabe\u00a0\u00a0 I bought from \u00a0an outdoor farm\u00a0market \u00a0yesterday. My intention was to add it to \u00a0a Holiday \u00a0lunch of polenta with broccoli rabe and fontina cheese melted on top. But broccoli rabe takes some time to clean and cook&#8230;. and in between the waiting there is a lot of relaxing and sitting and drinking another espresso and watching \u00a0and relaxing and chatting and a lot of &#8216;doing nothing&#8217; but waiting for the broccoli rabe to hurry up and cook and be\u00a0tender. Anyway, here is the recipe we had for lunch and the rest of the day was spent relaxing in front of the fireplace..and yes it is so sweet to just &#8216;do nothing..You must try it sometime..<br \/>\n<strong>Polenta with Broccoli Rabe and Fontina Cheese <img data-recalc-dims=\"1\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-1549\" title=\"polenta with broccoli rabe\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2010\/01\/polenta-with-broccoli-rabe-150x150.jpg?resize=150%2C150&#038;ssl=1\" alt=\"polenta with broccoli rabe\" width=\"150\" height=\"150\" \/><\/strong><br \/>\n2 pounds of fresh Broccoli Rabe-cleaned<br \/>\n4 tablespoons extra virgin olive oil<br \/>\n2 cloves garlic<br \/>\n2 small dried red hot peppers<br \/>\npinch\u00a0of salt<br \/>\n1 cup of cornmeal<br \/>\n8 ounces of fontina cheese<br \/>\nWash and clean broccoli rabe, cutting off the bottom, hard part. Place in boiling water and cook till tender- about 30-40 minutes. Drain well. Place olive oil in saute pan with garlic cloves and dried red hot peppers (pepperoncini). Saute for about 30 seconds. Chop cooked broccoli rabe\u00a0 and place in saute pan with olive oil. Place in approx 1\/2 cup water. Saute for approximately 15 minutes.<br \/>\nCook polenta as directed on package. Place polenta in oven proof dishes.
