{"id":1238,"date":"2009-08-31T04:22:20","date_gmt":"2009-08-31T11:22:20","guid":{"rendered":"http:\/\/marialiberati.com\/?p=1238"},"modified":"2009-08-31T04:22:20","modified_gmt":"2009-08-31T11:22:20","slug":"a-dinner-in-three-acts","status":"publish","type":"post","link":"https:\/\/marialiberati.com\/freshsite\/2009\/08\/31\/a-dinner-in-three-acts\/","title":{"rendered":"A Dinner in Three Acts.."},"content":{"rendered":"<p>\u00a0<br \/>\n<img data-recalc-dims=\"1\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-1241\" title=\"linguine alla vongole\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2009\/08\/linguine-alla-vongole-150x150.jpg?resize=150%2C150&#038;ssl=1\" alt=\"linguine alla vongole\" width=\"150\" height=\"150\" srcset=\"https:\/\/i0.wp.com\/marialiberati.com\/freshsite\/wp-content\/uploads\/2009\/08\/linguine-alla-vongole.jpg?resize=150%2C150&amp;ssl=1 150w, https:\/\/i0.wp.com\/marialiberati.com\/freshsite\/wp-content\/uploads\/2009\/08\/linguine-alla-vongole.jpg?zoom=2&amp;resize=150%2C150&amp;ssl=1 300w, https:\/\/i0.wp.com\/marialiberati.com\/freshsite\/wp-content\/uploads\/2009\/08\/linguine-alla-vongole.jpg?zoom=3&amp;resize=150%2C150&amp;ssl=1 450w\" sizes=\"(max-width: 150px) 100vw, 150px\" \/><br \/>\nA dinner of freshly prepared seafood and linguine is always on the menu when I\u00a0am\u00a0at \u00a0the beach and this weekend was no exception.\u00a0 Eating grilled fish and pasta\u00a0alla vongole\u00a0 outside overlooking the beach adds so much to the meal&#8230;<br \/>\nOur meal was accompanied by\u00a0a locally made Pecorino wine from a small town called Offida in the province of Le Marche..\u00a0The\u00a0sky above us\u00a0was the perfect &#8216;ceiling&#8217; of brightly shining stars and\u00a0half moon\u00a0the scene below us was gently rolling waves and a quiet sandy beach dotted by empty chairs and closed beach umbrellas waiting for tomorrow&#8217;s visitors..<br \/>\nTo finish up the meal and refresh from the warm August breezes rolling in off the shore was a lemon sorbetto made with limoncello-a refresher for the taste buds and the perfect ending to a meal in 3 acts..linguine alla vongole..grilled fish (caught fresh that day)..lemon sorbetto..<br \/>\nHere&#8217;s the recipe :(be sure to use the smallest clams you can find)..\u00a0 clams are best when bought freshest and prepared the same day as purchased or caught ..<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\"><strong><em>Linguine Alla Vongole<\/em><\/strong><\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">2 lbs of freshly washed clams<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">a small handful of parsley leaves<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">3 cloves garlic<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">1 small onion<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">1 lb linguine or spaghetti<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">\u00bd fresh lemon<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">1 cup dry white wine<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">2 tblsps extra virgin cold pressed, olive oil<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">\u00a0<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">Immerse clams in fresh, clean water and remove taking out the sand, brush as well with small brush, repeat this till sand is removed.<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">\u00a0<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">Bring water to boil in separate pasta pot. Place in pasta and cook till al dente.<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">\u00a0<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">In a pot , place in the white wine and all clams. Bring clams to a boil, let boil for 5 minutes. Discard any clams that have not opened up. Remove from heat. Filter the liquid and set aside to be used as cooking liquid.<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">Chop parsley, onion and garlic. Place all in saute pan with olive oil and cooking liquid made from wine. Add in juice squeezed from \u00bd fresh lemon, pinch of salt and freshly ground pepper and clams.<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\">Saute for 5 minutes. Lower heat and toss in cooked pasta.
