{"id":1175,"date":"2009-08-17T14:25:28","date_gmt":"2009-08-17T21:25:28","guid":{"rendered":"http:\/\/marialiberati.com\/?p=1175"},"modified":"2009-08-17T14:25:28","modified_gmt":"2009-08-17T21:25:28","slug":"torta-rustica-a-recipe-for-a-delicious-summer-lunch","status":"publish","type":"post","link":"https:\/\/marialiberati.com\/freshsite\/2009\/08\/17\/torta-rustica-a-recipe-for-a-delicious-summer-lunch\/","title":{"rendered":"Torta Rustica..a recipe for a delicious summer lunch.."},"content":{"rendered":"<p>Lunch (per my previous post today) was a treat for the taste buds and the recipe for the <strong>Torta Rustica<\/strong>-which literally means- <strong>rustic pie<\/strong>.<br \/>\nA few tips on Torta Rustica-this recipe contains spinach but you can substitute swiss chard or make a torta rustica using grilled eggplant and\/or mushrooms.. my favorite is the spinach one.\u00a0 We made the puff pastry crust but it is quite time consuming so I am going to recommend that you purchase a high quality (one that contains NO hydrogenated fats). If you would like to make your own puff pastry email me for the recipe at: <a href=\"mailto:editor@marialiberati.com\">editor@marialiberati.com<\/a> and put &#8216;puff pastry&#8217; in the subject.<br \/>\nAnd\u00a0ohh can&#8217;t forget\u00a0\u00a0the Pecorino wine we chose..it complemented this dish so well.<br \/>\n<strong>TORTA RUSTICA<\/strong><br \/>\n<strong>*1 ready made puff pastry for a crust<\/strong><br \/>\n<strong>* 1 lb of fresh or frozen spinach-washed and chopped<\/strong><br \/>\n<strong>*1\/2 cup grated parmigiana-reggiano cheese<\/strong><br \/>\n<strong>*1\/2 lb fresh ricotta cheese<\/strong><br \/>\n<strong>*2 cloves garlic<\/strong><br \/>\n<strong>*2 tblsps extra virgin olive oil<\/strong><br \/>\n<strong>Unroll crust and place in\u00a0\u00a0pie or torte pan-greased with butter. Place olive oil in saute pan with 2 peeled whole cloves of garlic. Saute till just about golden. Then place in chopped spinach. Saute till cooked. Remove garlic cloves, salt to taste. Place fresh ricotta in a bowl and place in spinach, grated parmigiana-reggiano cheese. stir till well blended.<\/strong><br \/>\n<strong>Place mixture into crust. Place in oven.
