Something that no one seemed to have a clue about was what temperature should their wine be served at. Ahh.. this brought to mind my good friends GianLuca\u00a0 and Velia\u00a0from \u00a0the famous wine bar in <a class=\"zem_slink\" title=\"Orvieto\" rel=\"snooth\" href=\"http:\/\/www.snooth.com\/wines\/Orvieto\">Orvieto<\/a> (<a class=\"zem_slink\" title=\"Italy\" rel=\"geolocation\" href=\"http:\/\/maps.google.com\/maps?ll=41.9,12.4833333333&amp;spn=10.0,10.0&amp;q=41.9,12.4833333333 (Italy)&amp;t=h\">Italy<\/a>)- the Champagneria!!<br \/>\nA little wine bar in the main piazza of Orvieto but a place where one can get\u00a0an education about wines\u00a0from all over the world. Here is some information that I have learned from sommeliers like GianLuca and vineyards that I have trained at in Italy.<br \/>\n\u00a0The temperature that you serve the wine is just as important as the quality of the wine itself. You are making a grand mistake is you serve a great wine at the wrong temperature, the special qualities of that wine will not be evident .<br \/>\nHere are the perfect temperatures the different type of wines should be served:<br \/>\n*<a class=\"zem_slink\" title=\"Champagne (wine region)\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Champagne_%28wine_region%29\">Champagne<\/a>-8 degrees C<br \/>\n*Dry white and rose wines- 10<br \/>\n*Light red wine- 14 degrees<br \/>\n*Aged red wine-18<br \/>\n*Sweet wines and liqueuers- 8<br \/>\nIf the wine is too cold, pour iti n the <a class=\"zem_slink\" title=\"Glass\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Glass\">glass<\/a> and leave for a few minutes to warm up.<br \/>\nThe glases the wine is served in is just as important. Clear, transparent glases are the best so that one can experience the wine. But also a glass that has a long stem is best\u00a0to serve wine so that your fingers do not touch the part containing the wine and do not modify the temperature of the wine in any way.<br \/>\n\u00a0Dry spumante and champagne should be served in a flute so that one can see the bubbles and the perfume of the wine is released slowly.<br \/>\nHowever, sweet champagne and sweet spumante should be served in a cup like glass.<br \/>\nThis is the season for <a class=\"zem_slink\" title=\"Grape\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Grape\">grapes<\/a> and they are at their best. My favorite recipe for taking advantage of the luscious grapes of Fall is a <a class=\"zem_slink\" title=\"Risotto\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Risotto\">risotto<\/a> with white grapes and white wine.<br \/>\nIt reminds me of being at the being at the farm in <a class=\"zem_slink\" title=\"Tuscany\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Tuscany\">Tuscany<\/a> where I do all my cooking programs-the crisp autumn evenings and the warmth of the risotto..<br \/>\n&#8220;To make a friend, a glass of wine is enough, to maintain the friendship you need a whole bottle&#8221; as an old Italian saying goes..<br \/>\n<strong>Risotto all&#8217;uva Bianca (risotto with white grapes<\/strong>)<br \/>\n* 1\/2 cups rice for risotto (carnaroli or arborio)<br \/>\n*1\/2 lb firm white grapes\u00a0<br \/>\n*1 small white onion<br \/>\n*4 tblsps <a class=\"zem_slink\" title=\"Parmigiano-Reggiano\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Parmigiano-Reggiano\">parmigiano-reggiano<\/a> cheese<br \/>\n*1\/2 cup dry white wine<br \/>\n*2 tblsps butter<br \/>\n*1 quart vegetable broth<br \/>\nWash grapes , cut in half and take out seeds. Melt butter in saute pan, then place in chopped onion. When onion is transparent add in dry rice and let toast for a minute. Add in wine, and when the liquid evaporates place i n 3\/4 cup vegetable broth. Stirring constatnly. Repeat until rice is al dente-approx 18 minutes. However, at mid cooking, add in grapes and stir in. Then remove from heat and add remaining butter and top with\u00a0 greated parmigiano-reggiano cheese. Serve immediately.
