{"id":1091,"date":"2009-07-14T11:02:29","date_gmt":"2009-07-14T11:02:29","guid":{"rendered":"http:\/\/marialiberati.com\/blog2\/?p=792"},"modified":"2009-07-14T11:02:29","modified_gmt":"2009-07-14T11:02:29","slug":"792","status":"publish","type":"post","link":"https:\/\/marialiberati.com\/freshsite\/2009\/07\/14\/792\/","title":{"rendered":"Spaghetti alla Carbonara-the President&#039;s Favorite Dish"},"content":{"rendered":"<p><img data-recalc-dims=\"1\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-793\" title=\"spaghetti alla carbonara\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2009\/07\/spaghetti-alla-carbonara-150x150.jpg?resize=150%2C150&#038;ssl=1\" alt=\"spaghetti alla carbonara\" width=\"150\" height=\"150\" \/><br \/>\n\u00a0copyright 2009, Maria Liberati<br \/>\nIt&#8217;s recipe Tuesdays on twitter at <a href=\"http:\/\/twitter.com\/Marialiberati\">http:\/\/twitter.com\/Marialiberati<\/a> so you can follow along there for recipes all through today..<br \/>\nIn The Basic Art of Italian Cooking Kitchen we are doing a favorite (so they tell me -so proudly-\u00a0in <a class=\"zem_slink\" title=\"Italy\" rel=\"geolocation\" href=\"http:\/\/maps.google.com\/maps?ll=41.9,12.4833333333&amp;spn=10.0,10.0&amp;q=41.9,12.4833333333 (Italy)&amp;t=h\">Italy<\/a>) of\u00a0 <a class=\"zem_slink\" title=\"Barack Obama\" rel=\"homepage\" href=\"http:\/\/www.whitehouse.gov\/\">President Obama<\/a> ..<br \/>\n<strong>Spaghetti\u00a0 alla Carbonara<\/strong><\/p>\n<p style=\"MARGIN-BOTTOM: 0in\" align=\"justify\">\u00a0Some believe that this dish was originally made for Italian charcoal workers, for the name is derived from the Italian word for charcoal.<\/p>\n<ul>\n<li>\n<p style=\"MARGIN-TOP: 0.19in; MARGIN-BOTTOM: 0in\" align=\"justify\">1\/2 yellow onion, chopped<\/p>\n<\/li>\n<li>\n<p style=\"MARGIN-BOTTOM: 0in\" align=\"justify\">4 slices bacon, diced<\/p>\n<\/li>\n<li>\n<p style=\"MARGIN-BOTTOM: 0in\" align=\"justify\">1 tablespoon <a class=\"zem_slink\" title=\"Olive oil\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Olive_oil\">olive oil<\/a><\/p>\n<\/li>\n<li>\n<p style=\"MARGIN-BOTTOM: 0in\" align=\"justify\">1\/2 clove <a class=\"zem_slink\" title=\"Garlic\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Garlic\">garlic<\/a>, minced<\/p>\n<\/li>\n<li>\n<p style=\"MARGIN-BOTTOM: 0in\" align=\"justify\">2 tablespoons dry white <a class=\"zem_slink\" title=\"Wine\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Wine\">wine<\/a><\/p>\n<\/li>\n<li>\n<p style=\"MARGIN-BOTTOM: 0in\" align=\"justify\">2 eggs<\/p>\n<\/li>\n<li>\n<p style=\"MARGIN-BOTTOM: 0in\" align=\"justify\">1 tablespoon chopped fresh <a class=\"zem_slink\" title=\"Parsley\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Parsley\">parsley<\/a><\/p>\n<\/li>\n<li>\n<p style=\"MARGIN-BOTTOM: 0in\" align=\"justify\">salt, ground pepper<\/p>\n<\/li>\n<li>\n<p style=\"MARGIN-BOTTOM: 0.19in\" align=\"justify\">parmigiana-<a class=\"zem_slink\" title=\"Parmigiano-Reggiano\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Parmigiano-Reggiano\">reggiano cheese<\/a><\/p>\n<\/li>\n<\/ul>\n<p style=\"MARGIN-BOTTOM: 0in\" align=\"justify\">Have a large skillet, cook diced bacon until slightly crisp. Remove and drain onto paper towels. Keep 2 tablespoons of <a class=\"zem_slink\" title=\"Bacon\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Bacon\">bacon fat<\/a>. Add olive oil, onion, cook until it is translucent. Add garlic and wine; cook one more minute.<\/p>\n<p style=\"MARGIN-BOTTOM: 0in\" align=\"justify\">Put the bacon back to pan; add cooked and drained <a class=\"zem_slink\" title=\"Spaghetti\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Spaghetti\">spaghetti<\/a>. Add beaten eggs and cook, tossing until eggs are barely set. Add parmesan, and toss again. Add salt and pepper.
