There is usually a rainbow amidst a cloudy, dark \u00a0sky you just have to look for it.. If you don&#8217;t look for it you will never find it&#8230;<br \/>\nFirst of all a special thanks to a special friend who sent this message ..<br \/>\nA perfect way to end a not so perfect day!<br \/>\nAnd it also reminds me of a favorite saying of my better half<br \/>\n&#8220;Rosa di sera, bel tempo si spera&#8221; he will remind me after a particularly rainy night and the sky will open up with this beautiful red color to remind us that the weather tomorrow will become beautiful<br \/>\nRoughly translated means that &#8216;the red evening sky will bring beautiful weather tomorrow&#8217;.<br \/>\nWhere is this leading to&#8230;&#8230;.. anginetti cookies&#8230;something else that really cheers me up when I have had an unuusally stressful day. They are light little angel puffs&#8230;Baking up a small batch of these brings the sunshine back into a dreary day. And oh yes ,eating them are just as much fun..and put that lightness back into your spirit&#8230;<br \/>\nHope you got to see a rainbow today&#8230;.<img data-recalc-dims=\"1\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-748\" title=\"anginetti-cookies\" src=\"https:\/\/i0.wp.com\/www.marialiberati.com\/wp-content\/uploads\/2009\/06\/anginetti-cookies-150x150.jpg?resize=150%2C150&#038;ssl=1\" alt=\"anginetti-cookies\" width=\"150\" height=\"150\" \/><br \/>\n<strong>Anginetti Bite-Sized\u00a0<\/strong><strong>Cookies: (yields approximaely 40 cookies)<\/strong><br \/>\n1 tsp <a class=\"zem_slink\" title=\"Vanilla extract\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Vanilla_extract\">vanilla extract<\/a><br \/>\n1 tsp <a class=\"zem_slink\" title=\"Lemon\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Lemon\">lemon<\/a> zest<br \/>\n6 tbsp butter<br \/>\n\u00bd-cup <a class=\"zem_slink\" title=\"Milk\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Milk\">skim milk<\/a><br \/>\n\u00bd-cup regular or organic <a class=\"zem_slink\" title=\"Sugar\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Sugar\">sugar<\/a><br \/>\n3 whole eggs<br \/>\n3 -1\/2 cups all-purpose <a class=\"zem_slink\" title=\"Flour\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Flour\">flour<\/a><br \/>\n2 tsp <a class=\"zem_slink\" title=\"Baking powder\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Baking_powder\">baking powder<\/a><br \/>\n\u00bd tsp <a class=\"zem_slink\" title=\"Sodium bicarbonate\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Sodium_bicarbonate\">baking soda<\/a><br \/>\n\u00a0<br \/>\n<strong>Icing:<\/strong><br \/>\n1 tsp vanilla extract<br \/>\n1 tbsp fresh squeezed <a class=\"zem_slink\" title=\"Lemon juice\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Lemon_juice\">lemon juice<\/a><br \/>\n1-cup confectioners&#8217; sugar<br \/>\n1 tbsp water<br \/>\n\u00a0<br \/>\nPreheat oven to 350 degrees while lining large cookie sheet with <a class=\"zem_slink\" title=\"Parchment\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Parchment\">parchment paper<\/a> or <a class=\"zem_slink\" title=\"Aluminium foil\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Aluminium_foil\">aluminum foil<\/a> and non-stick coating.<br \/>\n\u00a0<br \/>\nIn large mixing bowl, beat vanilla, zest, margarine, milk, and sugar with electric mixer on medium setting until texture is well blended. Add eggs one at a time, beating each addition, and then continue to beat mixture for 1 minute.<br \/>\n\u00a0<br \/>\nOn low speed, blend flour (1 cup at a time), powder, and baking soda until consistency becomes firm, sticky dough. If needed, have wooden spoon available for mixing. Dust hands lightly with additional flour, rolling dough into bite-sized balls. Place approximately 20 onto prepared cookie sheet, spacing 2 &#8220;apart.<br \/>\n\u00a0<br \/>\nBake 10-12 minutes, or until light golden brown.<br \/>\n\u00a0<br \/>\n<strong>Icing:<\/strong> While first batch is baking, combine vanilla, lemon juice, sugar, and water into a small mixing bowl, whisking ingredients until mixture is completely blended. Remove cookies from oven, placing a sheet of wax or parchment beneath wire rack. Using a small pastry brush, frost the tops of each cookie with icing, sprinkle with additional confectioners&#8217; sugar, and transfer to rack for cooling.
