Gluten Free Chocolate Hazelnut Cheesecake. Easy and delicious!

Thanks to everyone that stopped by at my book signing at the Quakertown Library and the Bucks County Author Fest this past weekend. I had a surprise visit from my”besties” my nieces Elena, Sofia and their friend Keira! I also got to meet some interesting authors.

Especially for my nieces who love Hazelnut cream, also known as Nutella.. I wanted to share this simple 6 ingredient No Bake cheesecake.. This is a really versatile recipe you can adjust for most allergies.

Possible substitutions are– to make this gluten free substitute gluten free cookies for the crust, to make this dairy free substitute a creamy diary free type cheese for the mascarpone, to cut down on fat substitute fat free or part skim ricotta for the mascarpone.

Nutella Cheesecake

Filling:

8 ounces of mascarpone cheese

8 ounces of hazelnut cream (Nutella or any Nutella type product)

2 tablespoons of crushed, toasted hazelnuts

Crust:
8 ounces of hard cookies- can be chocolate chips, Italian type biscotti, tea biscuits, shortbread, any flavor you like

3 tablespoons butter

Melt butter, crush cookies. Place cookies in bowl and blend in butter with a fork. Line a cheesecake pan with parchment paper. Press crust mixture onto bottom of pan.

In bowl place in mascarpone cheese and Nutella or Nutella like product. Blend with spoon until creamy. Pour in pan on top of crust. Chill in fridge for at least 4 hours or until firm. remove from pan, top with crushed hazelnuts and serve
