The Christmas Holidays are my favorite time to be creative in the kitchen with all of the leftovers! Leftover sugar cookie dough or butter cookie dough..turn it into a delicious crostata. Add some lemon rind and dash of vanilla to the dough.
After Christmas Crostata
*leftover cookie dough
*rind of 1 lemon
*1 tsp of vanilla extract
*1- 13 ounce jar of marmalade
Preheat oven to 350 degrees
Add 1 lemon rind and dash of vanilla to leftover cookie dough
Butter and flour an 8″ crostata pan or pie pan, but should be shallow like a crostata pan. Press cookie dough into pan and on sides to form a crust. Pierce bottom with a fork. Fill with a jar of your favorite marmalade. Top with pieces of leftover cookie dough or cut remaining dough with cookie cutter and arrange on top of crostata, bake for 30 minutes or until crust is brown.
