I am collecting souvenirs of the winter months here in the mountains of Abruzzo, Italy….souvenirs of the heart,mind and taste… flavors are my way of remembering special days..and for the last few weeks I have been creating memories of the days after the Christmas Holidays using the leftover foods from the Holidays..as leftovers are just as precious as when they were not… leftovers.
Cheesecake ‘Torronata’
(the perfect way to make use of leftover torrone before it is out of date)
Crust:
16 ounces crushed savoiardi
4 tablespoons butter, melted
2 tablespoons sugar
Filling:
8 ounces of cream cheese (light or regular)
4 ounces ricotta cheese
4 ounces plain or vanilla flavored yogurt (light or regular or Greek)
1/3 cup sugar-1/2 cup ( I used 1/3 cup sugar because torrone and crust adds sweetness but you can add more if you prefer sweeter cake)
2 eggs
Juice of one lemon
1/2 tsp of pure vanilla
8 ounces hard or soft torrone (any flavor)
For crust- place savoiardi in food processor till finely crushed or the consistency of bread crumbs, add in sugar. Place in pie pan and pour melted butter on top. With hands mix in butter till well blended then press mixture in form of crust in pie pan with hands press into pan, cover bottom and sides of pan.
For filling:
Separate eggs. Place yolks in bowl with sugar, beat till creamy and well blended. Then add in yogurt, ricotta, vanilla ,lemon juice. blend well. Then stir in torrone that has been broke into small pieces. Pour mix into pie crust and bake at 350 degrees for 40 minutes or until firm..
