Cool Melon Carpaccio | A Lazy August

The days of August are truly the lazy days of summer here..the sun beating down so strongly that you can almost taste it..it is a flavor that only comes once a year..but a welcome flavor that leaves a feeling of true relaxation..the verb ‘godere’ is really the only way to describe the way to enjoy the month that Mother Nature meant to really express the true meaning of summer…

.and the night of San Lorenzo is about to begin..what shall I wish for ..but tonight there was no falling starts..at least not outside our window….no it has been predicted that the 12th and 13th of August will be the night when the falling stars will be the most visible so  will be awaiting ..outside my window…
In the meantime..a recipe..a melon carpaccio finishes off my  night..
Melon Carpaccio
 
1/2 cup sugar
1 honeydew melon
small handful fresh mint
1 organic lime
1 vanilla bean
fresh lavender
Melt sugar in 2 tablespoons of water, add in small handful of fresh mint, vanilla bean. And warm this to just before boiling. Remove from heat and let cool, remove mint leaves and vanilla bean and add in juice of lime. Cut honeydew melon in half and remove skin and seeds, then slice into thin slices (you can use a mandolin slicer if possible). Place thin melon slices on a plate and drizzle sugar syrup over slices and let marinate in refrigerator for 2 hours. Serve slices decorated with lime rind, fresh mint leaves and fresh lavender flowers. You can also serve this with vanilla or coconut gelato..
