Don’t throw out that day old crusty bread yet…A panzanella salad is one of the most simplest, yet yummy Tuscan style salads.…add in tomatoes, celery, cucumbers, onions..olive oil, balsamic vinegar or wine vinegar..and that is a salad..Serve with a refreshingly chilled white wine and you have a meal!

Panzanella Salad
*4 slices day old crusty bread cut into cubes
*2 onion slices cut into small chunks
*1 tomato sliced
*1 cucumber peeled and sliced
*1 small head of romaine lettuce
*4 tablespoons extra virgin,cold pressed olive oil
*2 tablespoons freshly shaved parmigiano-reggiano cheese
*1 tablespoon balsamic vinegar
Cut bread into cubes and place under broiler for 2 minutes or until golden.
Cut onion, peel and slice cucumber and set aside. Wash lettuce and tear into small pieces. Place in bowl with cucumber and onion. Add in sliced tomatoes. Place olive oil, balsamic vinegar in cruet, Whisk till blended. When ready, pour over salad. Shave parmigiano reggiano cheese directly over salad and toss. Serve
