The last Holiday for the Christmas season is almost here..tomorrow..La Befana visits every good boy and girl and fills their stockings…the spirit of the Holiday is a fun and uplifting one..so whether or not you believe in La Befana..keep the spirit of what she is all about in your heart..Buona la Befana!
Tomorrow’s La Befana menu from The Basic Art of Italian Cooking: Holidays & Special Occasions-2nd edition
Antipasto plate –cheeses, olives from Sicily, anchovies in olive oil and parsley,smoked salmon, rucola and tomatoes with shaved parmigiana
First Course-Lasagna filled with scamorza, hard noiled egg slices and tomato sugo
Second course– Fried scamorza cheese, local bread from the town of Venafro,
Side  dish-spinach and chickory sauteed in garlic, extra virgin olive oil from Loreto Aprutino and hot pepper.
