Ultimate Summer Pasta Salad and Hanging Out with Hamilton

This weeks recipe is an ultimate summer Penne pasta salad with shrimp, fresh summer corn and avocado

Penne Pasta with Corn, Shrimp and Avocado

Serves 4

  • 1 ½ cups penne pasta or for a gluten free version use Jovial Foods Penne Pasta
  • 1 lb shrimp- cleaned
  • ½ avocado
  • 1 cup fresh corn
  • 3tablespoons of extra virgin olive oil
  • 1 fresh lemon
  • 1 clove garlic

*fresh parsley to taste

  • ¼ cup dry white wine (optional)
  • sale to taste
  • pepper to taste

Boil water for pasta. When water has come to rolling boil add in pasta and cook according to directions on box (should be al dente). Cut the avocado into small cubes and place in dish, squeeze juice of lemon on top of avocado. Set aside.

Clean shrimp. Place 2 tablespoons olive oil in saute pan and heat, Place in shrimp and saute for 1 minute, add in white wine, saute for 4 -5 minutes until liquid has evaporated.

Drain pasta. Add into saute pan with shrimp, add in avocado cubes, corn, 1 tablespoon olive oil. Toss and serve immediately while still warm. Garnish with chopped fresh parsley.
