Ingredients (serves 4):

  • 1 ½ cups Arborio rice
  • 4 cups vegetable or chicken broth, warmed
  • 3 cups fresh spinach, roughly chopped
  • 1 small onion, finely diced
  • 2 tbsp olive oil
  • ½ cup dry white wine
  • Zest of 1 lemon
  • ½ cup grated Parmigiano-Reggiano
  • Salt and pepper to taste
  • Extra lemon wedges for serving

Instructions:

  1. Warm olive oil in a pan and sauté the onion until soft and translucent.
  2. Add the Arborio rice and toast gently for 1–2 minutes.
  3. Pour in the white wine and let it evaporate.
  4. Add warm broth one ladle at a time, stirring gently as the rice absorbs the liquid.
  5. When the risotto is nearly done, fold in the chopped spinach and lemon zest.
  6. Stir in the Parmigiano, season to taste, and serve with a squeeze of fresh lemon.
