🥟 National Ravioli Day: A How To Celebration of Italy’s Little Pasta Pillows

March 20th marks National Ravioli Day, a delicious excuse to celebrate one of Italy’s most beloved culinary creations. Ravioli—those tender pockets of pasta filled with cheese, meat, vegetables, or even sweet surprises—have been warming hearts and plates for centuries. And like many Italian dishes, they carry stories of family, tradition, and regional pride.

Ravioli: A Taste of History

Ravioli dates back to the 14th century, with early mentions in Venetian and Tuscan cookbooks. The name comes from riavvolgere, meaning “to wrap,” and that’s exactly what ravioli does—it wraps flavor, memory, and love into every bite.
Whether served in a rich tomato sauce, a delicate sage butter, or floating in broth, ravioli has always been a dish that brings people together.

🌿 Seasonal Inspiration: Springtime Ricotta & Spinach Ravioli

To honor the arrival of spring and National Ravioli Day, I’m sharing a simple, elegant recipe that celebrates seasonal ingredients and Italian tradition.

Ricotta & Spinach Ravioli with Lemon Butter Sauce

Ingredients (for 4 servings):

  • 2 cups fresh ricotta
  • 1 cup cooked, chopped spinach (well-drained)
  • 1 egg yolk
  • 1/4 cup grated Parmigiano-Reggiano
  • Pinch of nutmeg, salt, and pepper
  • Fresh pasta sheets or homemade dough
  • 4 tbsp butter
  • Zest of 1 lemon
  • Fresh sage leaves (optional)

Instructions:

  1. Mix ricotta, spinach, egg yolk, cheese, and seasonings in a bowl.
  2. Place small spoonfuls on pasta sheets, cover with another sheet, and seal edges.
  3. Boil ravioli in salted water until they float (about 3–4 minutes).
  4. In a pan, melt butter with lemon zest and sage.
  5. Toss ravioli gently in the sauce and serve with extra Parmigiano.

This dish is light, bright, and perfect for spring—ideal for a Sunday lunch or a festive dinner with friends.
