Pistachios are one of those ingredients. Their soft green color, delicate sweetness, and rich aroma bring a little sunshine into the kitchen long before the season officially arrives. And with National Pistachio Day upon us, it’s the perfect moment to celebrate this beloved nut that has deep roots in Italian culinary tradition.

Pistachios have been part of Italian cooking for centuries, especially in Sicily, where the volcanic soil around Mount Etna produces some of the most flavorful pistachios in the world.
