Did you know that zucchini was a fruit?  Well, now you do! But if you’re a gardener, you most likely knew this already. But in a culinary context, it is treated as a vegetable and normally cooked alongside savory dishes. The word zucchini comes from ‘zucca’ the Italian word for squash. Zucchini grows in abundance and ready for harvest in August.  Zucchini growers also know that one plant of zucchini allows you to share this wonderful treat! This versatile fruit is a relative of the cucumber and the melon. For the best tasting zucchini’s, it is always best to choose a small or medium sized zucchini.
Nutritionally, it’s low in saturated fat and sodium and very low in cholesterol. It’s also a very good source of dietary fiber. A zucchini has more potassium than a banana! Instead of banana bread, zucchini bread is a delicious option.
To celebrate National Zucchini Day, plan a dinner menu full of this healthy vegetable! Grill it, bake it into bread, or add it to a salad.
