A Sack of Potatoes to Make Lunch | Cold Tuna and Potato Salad

Perfect pranzo (lunch) for a hot summer day and ….. a bag of  red potatoes( that need to be  used)..so a cold potato and tuna salad is in the works..perfect for eating lunch on the terrazzo outside (overlooking the hills- or I  should say the mountains of Abruzzo)..serve with a glass of chilled white wine..a cool slice of watermelon for dessert to keep you chilled..
Cold Tuna and Potato Salad

*2 pounds of gold or red potatoes
*2-16 ounce cans of tuna in water
*handful freshly chopped parsley
*extra virgin,cold pressed olive oil
*Balsamic vinegar
Boil potatoes till cooked but firm, cool and peel. Cut potatoes into cubes and place in large salad bowl. Set aside.Drain tuna and flake. Add into potatoes. Drizzle olive oil,then balsamic vinegar and gently turn mixture with wooden spoon. Salt to taste. Add in freshly chopped parsley and stir gently.. refrigerate for 30 minutes, serve cold.
