Food plays a big part in the Holidays here in the mountains of Abruzzo.. ..with every meal orchestrated like an opera that is a true Masterpiece…the Holidays seem to be a whirlwind of cooking and eating and eating and cooking..and in between visiting with friends and family.
One of my favorite dishes that is easy to prepare, delicious and does not require a lot of ingredients for the Feast of the Seven Fishes is Spaghetti with Shrimp Ragu…only a few ingredients….quick to prepare as well.
This makes a great first course for a Feast of the Seven Fishes Dinner…. the traditional Italian Christmas Eve Dinner….
Spaghetti with Shrimp Ragu
1 lb spaghetti
2 cloves garlic
1 pinch red hot pepper flakes or 1 small red hot dry red hot pepperoncino
pinch of salt
½ lb steamed, cleaned shrimp
3 tablespoons of extra virgin olive oil
Slice cleaned shrimp into 1/2 inch thick slices. Place olive oil, garlic in saute pan and saute till garlic is golden. Place in sliced shrimp and saute for 2 minutes. Add in hot red pepper and then set aside. Boil water for spaghetti and when water comes to a rolling boil, add in pasta and cook for time directed on package. Drain pasta when al dente. Add pasta into shrimp saute, Add pinch of salt, toss pasta around in shrimp saute and serve with fresh parsley.
