Poached Pears in Wine with Vanilla Cream
from The Basic Art of Italian Cooking: DaVinci Style
(best to use Anjou pears or pears that have a heavier outer skin)
4 pears, whole ,peeled
1 cup dry red wine
1/2 cup sugar
1 tsp cinnamon
1 cup vanilla yogurt
Place whole peeled pears in baking dish, cover with wine, sprinkle with sugar and cinnamon. Bake in oven preheated to 375 degrees F for 45 minutes or until pears are tender.
When done, remove from oven and let cool. Scoop up wine syrup at bottom of casserole, about 1 tablespoon.Place in small bowl and add in vanilla yogurt, blend together.
Place whole pear in center of plate, top with dollop of vanilla cream
