Spaghetti with Herbed Tomatoes

1 lb(500 gr) spaghetti

1lb (500 gr) red, ripe tomatoes

½ (100 gr) cup extra virgin olive oil

1 clove garlic

1 small handful basil leaves

1 small handful fresh parley leaves

2 sage leaves

2 tablespoons unsalted butter

pinch of salt to taste

pinch freshly ground black pepper

½ lb (250 gr) Pecorino cheese

Chop garlic, basil., sage and parsley together. Place olive oil in large saute pan and heat, place in garlic-herb mixture,saute till golden. Place in tomatoes that have been seeded and cut into small cubes or thin slices. Cook over moderate heat for 30 minutes. Place spaghetti in boiling, salted water, cook till al dente. Drain. Place in tomato sauce and toss. Butter baking casserole dish and place in spaghetti. Cover top with thinly sliced or shaved Pecorino cheese. Broil for 3 minutes or until cheese is bubbly or begins to melt, Serve
